This Healthy Spinach Artichoke Dip is a delicious vegan and dairy-free appetizer that combines creamy cashew-based sauce with spinach, artichoke hearts, and flavorful seasonings. Baked to perfection, it's a wholesome alternative to traditional dips, perfect for serving warm alongside tortilla chips or fresh vegetables.

Ingredients

Cashew Cream Sauce

  • 1 cup raw cashews (soaked overnight)
  • 1 ¼ cup vegan mayonnaise
  • ¼ cup water

Dip Mixture

  • 16 ounces frozen spinach (thawed and drained)
  • 1 (13.5-ounce) jar artichoke hearts (chopped and drained)
  • ⅓ cup finely chopped yellow onion
  • 4 garlic cloves (minced)
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  1. Blend the sauce: Preheat your oven to 400°F (200°C). In a food processor, combine the soaked raw cashews, vegan mayonnaise, and water. Blend for 1 to 2 minutes or until the mixture is completely smooth and creamy, creating the base of your dip.
  2. Mix the dip: Transfer the cashew cream to a large mixing bowl. Add the thawed and drained spinach, chopped and drained artichoke hearts, finely chopped yellow onion, minced garlic, kosher salt, and ground black pepper. Stir everything together thoroughly until well combined.
  3. Bake the dip: Spoon the mixture into a baking dish and spread it evenly. Bake in the preheated oven for 20 minutes until heated through and slightly bubbling around the edges. Remove from the oven and serve warm with tortilla chips, cucumber slices, or your favorite fresh vegetables.

Notes

  • Soaking the cashews overnight ensures a smooth and creamy dip base without any graininess.
  • Be sure to thoroughly drain the spinach and artichoke hearts to avoid excess moisture in the dip.
  • For a thicker dip, you can reduce the amount of water used in the cashew cream.
  • This dip can be made ahead of time and reheated gently before serving.
  • Feel free to customize the seasoning with your favorite herbs such as dill or parsley for added flavor.
