A simple and flavorful grilled vegetables recipe featuring a colorful medley of portabello mushrooms, eggplant, zucchini, yellow squash, onion, asparagus, and red bell pepper. Perfect as a side dish or light meal, these vegetables are lightly seasoned with olive oil, kosher salt, and black pepper, then grilled to tender, smoky perfection.

Ingredients

Vegetables

  • 2 portabello mushrooms
  • 1 eggplant
  • 1 zucchini
  • 1 yellow squash
  • 1 onion
  • 1 bunch thick asparagus
  • 1 red bell pepper

Seasoning

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon kosher salt
  • 1 tablespoon freshly ground black pepper

Instructions

  1. Preheat the Grill: Clean the grill grates thoroughly and preheat the grill to medium heat, maintaining a temperature between 350°F and 450°F to ensure even cooking and perfect charring.
  2. Prepare the Vegetables: Trim the ends of the eggplant, zucchini, yellow squash, and onion. Slice these vegetables into 1/3" to 1/2" thick pieces. Seed the red bell pepper and cut it into quarters. Trim the ends of the asparagus to remove the tough, woody parts.
  3. Season the Vegetables: Place all the prepared vegetables in a large bowl or tray and drizzle with 2 tablespoons of extra virgin olive oil. Evenly sprinkle 1 tablespoon each of kosher salt and freshly ground black pepper over the vegetables, tossing gently to coat all pieces thoroughly.
  4. Grill the Vegetables: Arrange the seasoned vegetables on the preheated grill, closing the lid to maintain heat. Grill the bell peppers, onions, and mushrooms for about 8 to 10 minutes until tender and lightly charred, turning occasionally. Grill the yellow squash, zucchini, eggplant, and asparagus for about 5 to 7 minutes until they reach the desired tenderness with nice grill marks.
  5. Serve: Remove the vegetables from the grill and serve warm or at room temperature as a vibrant and healthy side dish or light main course.

Notes

  • Make sure to clean and oil the grill grates before cooking to prevent vegetables from sticking.
  • Cut vegetables into uniform thickness to ensure even cooking.
  • If you prefer softer vegetables, grill them slightly longer, but watch closely to avoid burning.
  • For added flavor, consider marinating vegetables briefly with garlic or herbs before grilling.
  • This recipe is naturally gluten-free, vegan, and vegetarian-friendly.
