Ingredients

For the Chicken Marinade

  • 1 pound boneless, skinless chicken thighs
  • ¼ cup olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons hot honey, plus more for drizzling
  • 1 teaspoon freshly grated lemon zest
  • 1 garlic clove, minced
  • Kosher salt and pepper, to taste

For the Lime Corn Salad

  • 6 ears of sweet corn, kernels cut from the cob
  • 2 green onions, thinly sliced
  • ¼ cup chopped fresh cilantro
  • ¼ cup sour cream
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon freshly grated lime zest
  • Kosher salt and pepper, to taste

Instructions

  1. Marinate the Chicken: Place the chicken thighs in a glass dish or resealable bag. In a separate bowl, whisk together olive oil, lemon juice, hot honey, lemon zest, minced garlic, and a generous pinch of salt and pepper. Pour the marinade over the chicken, ensuring it is well coated. Marinate for at least 30 minutes or up to overnight in the refrigerator to allow flavors to infuse.
  2. Grill the Chicken: Preheat your grill to the highest setting. Once hot, place the marinated chicken thighs onto the grill. Cook for about 5 minutes until the chicken easily lifts and flips. Turn the chicken and grill for another 5 to 6 minutes or until the internal temperature reaches 165°F (74°C). Remove from grill and let rest for 5 to 10 minutes. Drizzle with extra hot honey just before serving to enhance the sweet and spicy flavor.
  3. Prepare the Corn Salad Base: In a large bowl, combine the fresh corn kernels, thinly sliced green onions, and chopped cilantro. Mix gently to distribute the ingredients evenly.
  4. Make the Dressing and Combine: In a smaller bowl, whisk together sour cream, lime juice, lime zest, and a generous pinch of salt and pepper. Pour this dressing over the corn mixture and stir until everything is well combined. Taste and adjust seasoning with additional salt and pepper if necessary.
  5. Serve: Plate the grilled hot honey chicken alongside a generous serving of the lime corn salad. Enjoy this delicious combination fresh off the grill!

Notes

  • Marinating the chicken overnight enhances the flavor and tenderness.
  • Use fresh corn for the best texture and sweetness in the salad.
  • If you don’t have a grill, you can use a grill pan or broil the chicken in the oven.
  • Adjust the amount of hot honey according to your preferred spice level.
  • Letting the chicken rest after grilling helps keep it juicy.
