Ingredients

Marinade

  • 1 large red onion, quartered
  • 8 garlic cloves
  • 1/2 cup extra virgin olive oil
  • Juice of 2 lemons
  • 1 teaspoon sweet paprika
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 teaspoon Aleppo pepper (or 1/2 teaspoon red pepper flakes)
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon nutmeg

Chicken Wings

  • 2 1/2 pounds chicken wings
  • Kosher salt, to season
  • 2 lemons, halved (for grilling and serving)

Instructions

  1. Make the marinade: In the bowl of a large food processor fitted with a blade, combine the quartered red onion, garlic cloves, extra virgin olive oil, lemon juice, and all the spices—sweet paprika, coriander, cumin, Aleppo pepper, turmeric, and nutmeg. Pulse until the mixture is well combined into a thick, flavorful marinade.
  2. Season the wings: Generously season the chicken wings with kosher salt. Place them in a large zip-top bag, then pour the prepared marinade over the wings. Seal the bag and massage it gently to evenly coat the wings with the marinade.
  3. Marinate: Lay the bag flat on a large plate or tray to catch any leaks. Refrigerate the wings for 2 to 4 hours, turning the bag over once midway through to ensure even marinating.
  4. Warm up the grill: Preheat a gas grill to 425°F (220°C). Lightly oil the grill grates to prevent sticking when cooking the wings.
  5. Grill: Remove the wings from the marinade, shaking off any excess marinade, and arrange them over direct heat on the grill. Cover the grill and cook the wings for 15 to 20 minutes, turning them over every 5 minutes to ensure even cooking. Grill the lemon halves flesh side down during this time to soften and caramelize them.
  6. Enjoy: Serve the grilled chicken wings immediately alongside the grilled lemons. Squeeze the grilled lemon juice over the wings for a fresh, tangy finish. For extra flavor, serve with a cooling sauce like tzatziki yogurt cucumber dip if desired.

Notes

  • Marinating for at least 2 hours allows the flavors to deeply penetrate the wings, but avoid exceeding 4 hours to maintain texture.
  • If using a charcoal grill, adjust heat to medium-high and monitor to avoid flare-ups.
  • For extra crispiness, you can finish wings under a broiler for 2-3 minutes after grilling.
  • Substitute Aleppo pepper with red pepper flakes for a spicy kick.
  • Leftover wings can be refrigerated for up to 2 days and reheated in an oven or air fryer for best texture.
