This recipe for Great Roasted Carrots offers a simple, flavorful way to enjoy tender, caramelized carrots with a subtle garlic kick and fresh parsley garnish. Roasted at high heat, these carrots develop a sweet, savory depth perfect as a side dish for any meal.

Ingredients

Vegetables

  • 1 kg / 2 lb carrots, peeled and ends trimmed

Seasoning

  • 2 tbsp olive oil
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 garlic cloves, minced using garlic press or finely grated (optional)

Garnish

  • Fresh parsley, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 220°C / 430°F (200°C fan) to prepare for roasting the carrots at a high temperature ensuring caramelization.
  2. Prepare Carrots: Cut the carrots diagonally into 5 cm (2 inch) lengths. For thicker carrots, slice them in half lengthwise to maintain an even size, which promotes uniform cooking.
  3. Season Carrots: Place the carrot pieces on a baking tray. Drizzle with olive oil, then sprinkle with salt and black pepper. Toss to coat evenly in the seasoning and oil.
  4. Initial Roast: Spread the carrots out in a single layer on the tray. Roast them in the preheated oven for 20 minutes to start caramelizing and softening.
  5. Add Garlic and Flip: Remove the tray from the oven. Push the carrots to one side, add the minced garlic (and any other flavor options you may want). Toss the carrots gently to combine with the garlic and juices.
  6. Final Roast: Return the tray to the oven and roast for an additional 10 minutes. After roasting, remove the carrots from the oven and toss again to coat them well in the garlicky oil and caramelized juices.
  7. Garnish and Serve: Sprinkle freshly chopped parsley over the roasted carrots for a fresh, vibrant finish. Serve warm as a delicious side dish.

Notes

  • Note 1: Use fresh, firm carrots for the best texture and flavor.
  • Note 2: Garlic is optional but adds a wonderful aroma and taste; adjust quantity based on preference.
  • Note 3: Consider adding other flavor options such as a sprinkle of smoked paprika, thyme, or a drizzle of honey for variation.
