Granny's 7 Layer Dip is a classic, crowd-pleasing appetizer featuring layers of creamy refried beans, tangy sour cream or Greek yogurt, rich guacamole, zesty salsa, shredded cheese, black olives, fresh cilantro, and scallions. This no-cook dip is perfect for parties and pairs wonderfully with crispy tortilla chips.

Ingredients

Layers

  • 1 1/2 cups refried pinto beans
  • 1 1/2 cups sour cream or plain Greek yogurt
  • 1 - 2 cups guacamole (recommended 2 cups)
  • 1/2 cup chunky salsa
  • 2 cups mixed shredded cheddar and pepper jack cheese
  • 1 cup pitted black olives
  • 1 cup fresh chopped cilantro
  • 1/2 cup chopped scallions
  • lime juice, to taste
  • sea salt, to taste

Instructions

  1. Layer the refried beans: In the bottom of a glass serving bowl or Pyrex dish, spread 1 1/2 cups of refried pinto beans evenly to create the first layer.
  2. Add the sour cream or Greek yogurt: Carefully spoon 1 1/2 cups of sour cream or plain Greek yogurt over the beans, spreading evenly to form the second layer.
  3. Spread the guacamole: Layer 2 cups of guacamole gently over the sour cream to keep the layers distinct and smooth.
  4. Top with salsa: Spoon 1/2 cup of chunky salsa on top of the guacamole layer, spreading evenly.
  5. Add half the cheese and herbs: Sprinkle 1 cup of the mixed shredded cheddar and pepper jack cheese, followed by 1/2 cup of chopped fresh cilantro, and 1/4 cup of chopped scallions over the salsa.
  6. Add the olives: Evenly distribute 1 cup of pitted black olives over the last layer.
  7. Top with remaining cheese: Sprinkle the remaining 1 cup of shredded cheese on top.
  8. Finish with fresh cilantro, scallions, lime juice, and sea salt: Just before serving, garnish the dip with the remaining 1/2 cup cilantro, 1/4 cup scallions, a squeeze of fresh lime juice, and a pinch of sea salt to enhance the flavors.
  9. Serve: Offer the dip with plenty of tortilla chips for scooping and enjoy immediately.

Notes

  • Using plain Greek yogurt instead of sour cream makes the dip slightly healthier and adds a bit of protein.
  • For best presentation, layer ingredients carefully to keep them distinct and visually appealing.
  • You can adjust the amount of guacamole to taste between 1 to 2 cups.
  • Make the dip fresh to avoid the layers from mixing or the ingredients from becoming watery.
  • This dip is naturally vegetarian but can be made vegan by substituting sour cream with vegan alternatives and using vegan cheese.
