Ingredients

Potato and Sandwich Base

  • 1 large russet potato
  • 4 slices bread
  • 2 tablespoons butter
  • 2 tablespoons avocado oil

Cilantro-Mint Chutney

  • 1 cup chopped cilantro
  • ½ cup fresh mint leaves
  • 1 diced green chile
  • 1 garlic clove
  • 1 (½-inch) piece peeled ginger root
  • Juice of ½ lemon
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 3 tablespoons water

Vegetable Filling

  • ½ cup sliced cucumber
  • ¼ cup sliced red onion
  • ½ cup thinly sliced green pepper
  • 1 sliced tomato
  • ½ teaspoon chat masala

Instructions

  1. Boil the Potato: Place the whole russet potato in a medium-sized pot and cover it with water. Bring the water to a boil, then reduce the heat to medium-low and cook for 15 to 20 minutes until the potato is tender and a fork slides in and out easily.
  2. Prepare the Cilantro-Mint Chutney: While the potato cooks, combine chopped cilantro, fresh mint leaves, diced green chile, garlic clove, peeled ginger root, lemon juice, salt, pepper, and 3 tablespoons of water in a food processor. Blend the mixture until smooth to create a fresh, flavorful chutney.
  3. Slice the Potato: Once tender, drain the potato, allow it to cool slightly, and then slice it into approximately 1/8-inch thick slices.
  4. Prepare the Bread: Butter one side of each slice of bread using softened butter. On the unbuttered side of one slice per sandwich, spread a generous layer of the prepared cilantro-mint chutney.
  5. Assemble the Sandwich: Layer the sliced potato evenly over the chutney, followed by slices of cucumber, red onion, green pepper, and tomato. Sprinkle a pinch of chat masala over the vegetables, then top with the second slice of bread with the buttered side facing outward.
  6. Cook the Sandwich: Heat 1 tablespoon of avocado oil in a large skillet over medium heat. Place one sandwich in the skillet and cook for about 5 minutes on each side, or until the bread is golden brown and crispy. Repeat with the second sandwich, adding more oil if necessary.
  7. Serve: Serve the Golden Bombay Sandwich hot with additional chutney and ketchup on the side for dipping if desired.

Notes

  • The russet potato is ideal for boiling and slicing due to its texture and starch content.
  • Adjust the amount of green chile in the chutney to your preferred spice level.
  • Use fresh ingredients for the chutney to ensure vibrant flavor.
  • Butter the bread generously to achieve a crispy and golden crust on the skillet.
  • The sandwich can be customized with additional veggies or cheese as per preference.
  • Serve immediately after cooking for the best texture and taste.
