This Ginger Miso Quinoa recipe is a flavorful and nutritious dish that combines fluffy quinoa with the savory depth of miso paste and the fresh zing of grated ginger. Enhanced with tamari and coconut oil, this quick and easy recipe delivers a delicious, Asian-inspired side or base that's perfect for a light meal or accompaniment to your favorite dishes.

Ingredients

Quinoa

  • 1 cup uncooked quinoa (yields about 3 cups cooked)

Sauce and Flavorings

  • 1 tablespoon miso paste
  • 1 - 2 teaspoons freshly grated ginger
  • 1 teaspoon tamari (or coconut aminos)
  • 1 tablespoon coconut oil

Instructions

  1. Cook the quinoa: Rinse 1 cup of quinoa under cold water to remove any bitterness. Place it in a pot with 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for about 10-15 minutes until the quinoa is light, fluffy, and all the water is absorbed. Remove from heat and let it cool until warm to the touch.
  2. Prepare the seasoning: In a bowl, mix together 1 tablespoon of miso paste, freshly grated ginger starting with 1 teaspoon and adjusting up to 2 teaspoons based on your taste preference, 1 teaspoon tamari or coconut aminos, and 1 tablespoon coconut oil.
  3. Combine and adjust flavor: Stir the warm quinoa into the miso-ginger mixture until well combined. Taste and season with salt or pepper if desired to enhance flavors further.
  4. Serve or add extras: If serving immediately, you can mix in additional add-ins like chopped scallions, sesame seeds, or steamed vegetables. Serve warm as a side dish or a light main.

Notes

  • Rinsing quinoa before cooking helps remove its natural bitter coating.
  • Miso paste varies in saltiness; adjust seasoning accordingly.
  • Freshly grated ginger gives the best flavor but ground ginger can be used in a pinch.
  • This recipe is versatile and pairs well with grilled proteins or stir-fried vegetables.
  • If not eating immediately, store in the refrigerator and reheat gently to preserve flavor and texture.
