Succulent garlic rosemary grilled lamb chops, marinated in a flavorful mixture of olive oil, garlic, and fresh rosemary, then grilled to a perfect medium-rare. This simple yet elegant dish is perfect for a quick weeknight meal or a special occasion, served best with mint apple sauce as a fresh accompaniment.

Ingredients

Meat

  • 1 rack of lamb (8 lamb chops)

Marinade

  • ¼ cup extra-virgin olive oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  1. Cut the lamb chops: Carefully slice the rack of lamb into individual chops, ensuring even thickness for uniform cooking.
  2. Make the marinade: In a small bowl, combine the extra-virgin olive oil, minced garlic, finely chopped fresh rosemary, kosher salt, and ground black pepper. Stir thoroughly to blend all the flavors.
  3. Marinate the lamb chops: Place the lamb chops in a baking dish. Pour the marinade over the chops, making sure both sides are well coated. Cover the dish and refrigerate for 30 minutes to allow the flavors to infuse.
  4. Grill the lamb chops: Preheat your outdoor grill or an indoor grill pan over medium-high heat. Place the marinated lamb chops on the grill and cook for approximately 3 minutes on each side, or until an instant-read thermometer inserted into the thickest part reads 135°F (57°C) for medium-rare doneness.
  5. Rest and serve: Remove the lamb chops from the grill and let them rest for a few minutes to allow juices to redistribute. Serve warm, optionally accompanied by mint apple sauce as a refreshing alternative to mint jelly.

Notes

  • For medium or well-done lamb, increase grilling time accordingly and monitor with a meat thermometer.
  • You can substitute fresh rosemary with dried rosemary if fresh is unavailable, but reduce quantity by half since dried herbs are more concentrated.
  • Allowing lamb chops to rest after grilling ensures juicier meat.
  • Marinating time can be extended up to 2 hours for a stronger flavor, but avoid marinating overnight as the garlic can become overpowering.
  • Use an instant-read thermometer for best cooking accuracy and to avoid overcooking.
