This Garlic Parmesan Pasta is a simple, creamy, and flavorful one-pot meal perfect for a quick weeknight dinner. Made with angel hair pasta cooked in a savory garlic-infused sauce of chicken broth and milk, then finished with butter and freshly grated Parmesan cheese, it’s rich, comforting, and ready in just 20 minutes.

Ingredients

Cheese and Butter

  • ½ cup Parmesan cheese (finely grated)
  • 3 tablespoons butter (divided)

Produce

  • 4 cloves fresh garlic (minced)
  • Fresh parsley (to garnish)

Liquids

  • 2 cups chicken broth
  • 1 cup milk

Pasta

  • 8 oz. angel hair pasta

Instructions

  1. Prepare Ingredients: Grate the Parmesan cheese and let it come to room temperature to ensure smooth melting in the sauce.
  2. Melt Butter and Cook Garlic: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté for 1-2 minutes until fragrant, stirring occasionally to avoid burning.
  3. Add Liquids and Bring to Boil: Pour in the chicken broth followed by the milk slowly while stirring. Bring the mixture to a rolling boil.
  4. Add Pasta to the Sauce: Add the angel hair pasta to the skillet. As it softens, use kitchen tongs to gently twist and integrate the noodles into the liquid to prevent clumping.
  5. Simmer Pasta: Cook the pasta for 4-5 minutes, stirring occasionally to keep noodles separated. Then reduce the heat to low to allow the pasta to finish cooking gently in the sauce.
  6. Finish with Butter and Cheese: Stir in the remaining 1 tablespoon of butter and toss to coat the pasta. Gradually sprinkle the Parmesan cheese while stirring until the sauce is smooth and creamy; it will thicken as it stands.
  7. Garnish and Serve: Sprinkle the pasta with fresh parsley to add color and freshness. Serve immediately, ideally alongside Garlic Bread with Cheese for a complete meal.

Notes

  • Angel hair pasta cooks very quickly; monitor carefully to prevent overcooking and clumping.
  • Parmesan cheese should be at room temperature for better melting and a smoother sauce.
  • The sauce may seem thin initially but will thicken as it sits and as the pasta absorbs the liquid.
  • Use fresh garlic over pre-minced for optimal flavor.
  • For a vegetarian version, substitute chicken broth with vegetable broth.
