This Garlic Butter Steak Bites and Potatoes recipe combines tender sirloin steak cubes with golden, herb-seasoned potatoes, all cooked in a luscious garlic butter sauce. It's a quick, one-pan meal perfect for a flavorful weeknight dinner that serves four.

Ingredients

For the Potatoes

  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 lb Yukon Gold potatoes, diced into ½-inch cubes (or red-skinned or fingerling potatoes)
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • ½ tsp kosher salt
  • ½ tsp ground pepper

For the Steak

  • 1½ lbs sirloin steak, cut into 1-inch cubes (alternatively beef tenderloin, NY strip steak, or stir fry meat)
  • 2 tbsp unsalted butter
  • Salt and pepper, to taste
  • Freshly chopped parsley, optional for garnish

Instructions

  1. Heat the skillet: Preheat a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of butter, letting the butter melt completely to create a rich base for cooking the potatoes.
  2. Season the potatoes: In a bowl, toss the diced potatoes with garlic, dried rosemary, dried oregano, kosher salt, and ground pepper to ensure all the flavors coat the potatoes evenly.
  3. Cook the potatoes: Add the seasoned potatoes to the skillet. Cook undisturbed for about 4 minutes to allow them to start crisping up, then stir and continue cooking for another 3-4 minutes until the potatoes are fork-tender. Remove the potatoes from the skillet and set aside in a bowl.
  4. Heat up for steak: Increase the heat to high and return the skillet to the stove. Add the remaining 2 tablespoons of butter and stir until melted, preparing a flavorful searing environment for the steak.
  5. Cook the steak bites: Add the steak cubes in a single layer to the hot skillet. Let cook for 1 minute without moving to develop a sear, then flip or stir the steak and cook for an additional 1-2 minutes until the desired doneness is reached. Remove skillet from heat.
  6. Toss potatoes and steak: Return the cooked potatoes back into the skillet with the steak. Toss everything together gently to combine and heat through. Adjust salt and pepper to taste.
  7. Garnish and serve: Sprinkle freshly chopped parsley over the steak bites and potatoes if desired. Serve immediately and enjoy your hearty, flavorful meal!

Notes

  • You can substitute sirloin with tenderloin, NY strip, or stir fry beef for variations in texture and flavor.
  • Using a cast iron skillet helps achieve a better sear on both potatoes and steak.
  • For additional flavor, you can add a splash of Worcestershire sauce or a squeeze of lemon juice before serving.
  • To make this dish gluten-free, ensure all seasonings used are certified gluten-free.
  • Leftover steak bites and potatoes can be refrigerated and reheated in a skillet for best results.
