Ingredients

Cookie Crust

  • ¼ cup unsalted butter (softened)
  • ½ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt

Cream Cheese Frosting

  • 8 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1-2 tbsp cream or milk
  • 1 teaspoon pure vanilla extract

Fruit Topping

  • Kiwi, sliced
  • Strawberries, sliced
  • Blueberries
  • Raspberries

Instructions

  1. Prepare the dough: In a medium bowl using an electric mixer, beat the softened butter and granulated sugar together until fluffy. Add the egg and vanilla extract, and mix until combined.
  2. Mix dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. Combine dough: Gradually add the dry ingredients to the butter mixture and beat until fully incorporated.
  4. Chill dough: Cover the dough tightly and refrigerate for at least 30 minutes to firm up and enhance flavor.
  5. Preheat oven: Set the oven to 350°F (175°C) for baking the crust.
  6. Shape crust: Lightly spray a 12-inch pizza pan with nonstick cooking spray. Press the chilled dough evenly onto the pan, spreading to the edges with your hands.
  7. Bake crust: Bake for 12-14 minutes until the crust is a light golden brown. Remove from oven and allow to cool completely before frosting.
  8. Make frosting: In a medium bowl, beat the softened cream cheese and butter together on medium speed until smooth and creamy, about 2 minutes.
  9. Add powdered sugar and cream: Gradually add the powdered sugar and 1 tablespoon of cream or milk, beating for 2 minutes until smooth.
  10. Add vanilla and adjust consistency: Mix in the vanilla extract and, if needed, add an additional tablespoon of cream or milk. Beat for another minute.
  11. Frost crust: Spread the cream cheese frosting evenly over the cooled cookie crust.
  12. Decorate with fruit: Arrange the sliced kiwi, strawberries, blueberries, and raspberries on top of the frosting as desired.
  13. Serve and store: Cut the fruit pizza into slices and serve immediately. Store leftovers in the refrigerator for up to 3 days.

Notes

  • Ensure the dough is chilled before baking for the best texture and easier handling.
  • You can customize the fruit toppings based on seasonal availability or preference.
  • Use full-fat cream cheese and butter for the creamiest frosting.
  • If desired, lightly brush the fruit with a bit of melted jelly or apricot preserves to add shine and preserve freshness.
  • Leftovers should be kept refrigerated and consumed within 3 days for optimal taste and safety.
