This French Onion Pot Roast is a hearty and flavorful slow-cooked beef dish featuring a tender chuck roast simmered with caramelized red onions, garlic, and a savory French onion soup mix. The slow cooking method ensures melt-in-your-mouth meat infused with rich, umami-packed broth, making it perfect for comforting family dinners.

Ingredients

Beef and Seasoning

  • 2 pounds beef chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Vegetables and Aromatics

  • 2 red onions, thinly sliced
  • 4 garlic cloves, minced

Sauce

  • 1 tablespoon soy sauce
  • 1 ½ tablespoons tomato paste
  • 3/4 cup beef broth (or beef stock)
  • 1 packet French onion soup mix (1 ounce)

Garnish

  • 2 teaspoons fresh parsley, chopped

Instructions

  1. Sear the Roast: Season the chuck roast with salt and black pepper on all sides. Heat a large skillet over medium-high heat and add a bit of oil. Sear the roast on all sides until it develops a golden brown crust. Transfer the seared roast to the bottom of your slow cooker.
  2. Cook the Onions: In the same skillet, add the thinly sliced red onions and cook for 3-4 minutes over medium-high heat to lightly brown them. They should be seared but not fully cooked yet. Spread the onions and minced garlic evenly over the roast in the slow cooker.
  3. Make and Add the Sauce: In a bowl, combine soy sauce, tomato paste, beef broth, and the French onion soup mix. Pour this mixture over the meat and onions in the slow cooker. Cover with the lid and set the slow cooker to low, cooking for 6-8 hours or until the beef is tender and easily shredded.
  4. Finish and Garnish: Once the roast is tender, carefully remove it from the slow cooker and place it on a serving dish. Sprinkle chopped fresh parsley over the top for color and freshness.
  5. Serve: Serve your French Onion Pot Roast with comforting sides like creamy mashed potatoes or crusty bread to soak up the flavorful juices.

Notes

  • Searing the roast before slow cooking helps develop deeper flavor and a beautiful crust.
  • Cooking onions until just browned enhances their sweetness and adds complexity to the dish.
  • You can use beef stock instead of broth for a richer flavor.
  • Leftovers keep well in the refrigerator for up to 3 days and reheat nicely.
  • For thicker gravy, remove the roast once cooked and simmer the sauce on the stovetop to reduce.
