Ingredients

Meat and Vegetables

  • 1 pound ground beef
  • ½ cup diced yellow onion
  • 1 teaspoon minced garlic (about 1-2 cloves)

Sauce and Seasonings

  • 3 Tablespoons salted butter
  • 3 Tablespoons all purpose flour
  • 1 ½ cups beef broth
  • 1 cup sour cream
  • 10.5 ounce can cream of mushroom soup
  • Salt and pepper, to taste

For Serving

  • Cooked egg noodles (optional)

Instructions

  1. Brown the ground beef and aromatics: In a large skillet over medium-high heat, cook 1 pound of ground beef along with ½ cup diced yellow onion and 1 teaspoon minced garlic until the beef is fully cooked and crumbled, and the onions are softened.
  2. Drain excess grease: Drain the cooked ground beef mixture to remove excess fat. Return the skillet to the stove over medium heat without the beef added back in yet.
  3. Make the roux: Add 3 tablespoons salted butter to the skillet and allow it to melt. Once melted, whisk in 3 tablespoons all-purpose flour until the mixture is smooth and absorbs the butter, forming a roux.
  4. Add beef broth and thicken: Slowly pour in 1 ½ cups beef broth while whisking vigorously to eliminate lumps. Increase the heat to high and bring the sauce to a boil. Let it cook for 2-3 minutes until it thickens slightly.
  5. Incorporate sour cream and mushroom soup: Reduce the heat to medium. Whisk in 1 cup sour cream and a 10.5-ounce can of cream of mushroom soup until the sauce is well combined and creamy.
  6. Season the sauce: Add salt and pepper to taste, adjusting seasoning by tasting the sauce. If it becomes too thick, add a little more beef broth to reach desired consistency.
  7. Combine beef with sauce: Return the browned ground beef mixture to the skillet and stir to combine. Heat through until everything is warmed evenly.
  8. Serve: Spoon the beef stroganoff sauce over cooked egg noodles and enjoy immediately.

Notes

  • Drain excess grease from the ground beef to prevent a greasy sauce.
  • Adjust beef broth to control sauce thickness; add more broth for a thinner sauce if desired.
  • Serve over egg noodles, mashed potatoes, or rice for a variation.
  • For a richer flavor, use homemade beef broth if possible.
  • Leftovers can be stored in the refrigerator for up to 3 days.
