These Easy Blender Crepes are a quick and simple recipe perfect for breakfast or dessert. Made by blending the batter ingredients together and letting the batter rest, these delicate crepes cook up thin and tender with a slight golden-brown finish. Ideal for filling with sweet or savory options, they can be made ahead for convenience.

Ingredients

Batter Ingredients

  • 1 cup milk (whole or 2%)
  • ¼ cup water
  • 2 large eggs
  • 2 tablespoons melted ghee (or melted butter)
  • 1 tablespoon granulated sugar
  • 1 cup all-purpose flour
  • ¼ teaspoon salt

For Cooking

  • Additional melted butter for brushing the skillet

Instructions

  1. Blend: Add all the batter ingredients into a blender, placing the liquids on the bottom to ensure smooth blending. Blend until the mixture is smooth and well combined.
  2. Store: Pour the batter into a measuring cup, cover it tightly with plastic wrap, and refrigerate for at least 1 hour or up to 48 hours to allow the batter to rest and hydrate.
  3. Preheat: Heat an 8-inch skillet over medium heat and brush it lightly with melted butter to prevent sticking.
  4. Cook Crepes: Holding the skillet in your dominant hand, pour ¼ cup of batter into the skillet with the other hand as you tilt and rotate the pan to evenly spread the batter in a thin layer. Cook for 1-2 minutes until the edges lift and the top surface is dry. Flip the crepe carefully and cook the second side for about 30 seconds until slightly golden with bubbly brown spots.
  5. Set Aside and Continue: Transfer cooked crepes to a plate stacking them as you go. They can be covered with plastic wrap and refrigerated for up to one day before serving.

Notes

  • For best results, let the batter rest in the fridge for at least 1 hour to improve texture.
  • The first crepe may not cook perfectly, but it helps season the pan for subsequent ones.
  • You can substitute ghee with melted butter or oil if preferred.
  • Crepes can be served with sweet fillings like jam, Nutella, or fresh fruit, or savory fillings like cheese.
  • Use a non-stick skillet for easier flipping and cooking.
