A simple and flavorful Easy Baked Lemon Chicken recipe that features tender chicken breasts baked in a tangy lemon butter sauce, perfect for a quick and healthy weeknight dinner.

Ingredients

Chicken

  • 4 boneless skinless chicken breasts

Sauce

  • 3 tablespoons butter
  • ⅓ cup chicken broth
  • 4 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 2 teaspoons minced garlic
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste (1 teaspoon salt and ¼ teaspoon pepper recommended)

Garnish (Optional)

  • Fresh rosemary
  • Lemon slices

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit and grease a baking sheet or a large casserole dish to prevent the chicken from sticking.
  2. Brown the Chicken: Melt the butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 2-3 minutes on each side until nicely browned. This step locks in flavor and juices. Then transfer the browned chicken onto the prepared baking sheet.
  3. Prepare the Sauce: In a small bowl, whisk together chicken broth, fresh lemon juice, honey, minced garlic, Italian seasoning, salt, and pepper until well combined. This sauce will add bright, savory, and slightly sweet flavors to the chicken.
  4. Bake the Chicken: Pour the lemon sauce evenly over the chicken breasts on the baking sheet. Place them in the oven and bake for 20-30 minutes, depending on the size of the chicken breasts (smaller breasts bake closer to 20 minutes, larger ones closer to 30). Every 5-10 minutes, spoon the sauce over the chicken to keep it moist and flavorful.
  5. Garnish and Serve: Once the chicken is cooked through and no longer pink inside, remove from the oven. Garnish with fresh rosemary sprigs and lemon slices if desired. Serve immediately for a delicious and aromatic meal.

Notes

  • Make sure not to overcook the chicken to keep it juicy and tender.
  • Adjust salt and pepper according to your taste preferences.
  • Use fresh lemon juice for the best flavor impact.
  • Optional garnishes add a nice aroma and presentation but can be omitted.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
  • To ensure even cooking, consider pounding chicken breasts to an even thickness before browning.
