This Easy Baked Brie recipe transforms a simple wheel of brie cheese into a gooey, flavorful appetizer with the sweetness of fig jam, the fresh aroma of rosemary, and the crunch of pecans. Perfect for entertaining, it pairs beautifully with crackers, sliced baguette, or apple slices.

Ingredients

Cheese

  • 1 large round brie (12 to 16 oz / 340 to 454 g)

Toppings

  • 1/3 cup homemade or store-bought fig jam
  • 1 teaspoon finely chopped fresh rosemary
  • ¼ cup chopped pecans

For Serving

  • Crackers, sliced baguette, or apple slices (e.g., Toasteds Rosemary & Olive Oil Crackers recommended)

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and position the oven rack in the middle to ensure even baking.
  2. Score the brie: Using a serrated knife, carefully make parallel cuts across the top rind of the brie about ½ inch (13 mm) apart. Cut just through the rind without cutting into the cheese underneath. Then rotate the brie 90 degrees and score again perpendicular to the first cuts, creating a crosshatch pattern on top. Take care to only penetrate the rind to help the cheese bake evenly without losing its shape.
  3. Prepare for baking: Place the scored brie into a small cast iron skillet or any oven-safe serving dish. Spread about two-thirds of the fig jam evenly over the top of the brie. Spoon the remaining jam around the sides of the cheese in the skillet. Evenly sprinkle the finely chopped rosemary and chopped pecans over the jam-covered brie.
  4. Bake the brie: Place the skillet in the preheated oven and bake for 12 to 15 minutes. Bake until the brie is soft and just beginning to ooze out from the rind, indicating it's perfectly melted inside but still holds shape.
  5. Serve cautiously: Remove from the oven and place the hot skillet on a heat-resistant surface. Warn guests that the dish will be hot. Serve immediately with crackers, sliced baguette, or apple slices for dipping and spreading the warm, melted cheese mixture.

Notes

  • Score the brie gently to avoid cutting too deep and losing the cheese structure during baking.
  • If you don’t have a cast iron skillet, any small oven-safe dish will work.
  • Use quality fig jam for best flavor; homemade or store-bought options both work well.
  • Fresh rosemary adds a lovely herbal note but can be omitted or substituted with thyme if unavailable.
  • This appetizer is best served immediately while the cheese is warm and gooey.
