This Disneyland Copycat Churro Toffee recipe combines rich homemade toffee with a cinnamon-sugar topping and a luscious white chocolate coating. Inspired by the classic treat, it features buttery, crunchy toffee topped with melted Ghirardelli white chocolate wafers and sprinkled with a cinnamon sugar blend, delivering the perfect balance of sweetness and spice in every bite.

Ingredients

Toffee Base

  • 4 sticks butter (2 cups)
  • 2 cups white sugar
  • 1 teaspoon salt

Toppings

  • 3 bags Ghirardelli White Melting Wafers (about 24 ounces)
  • 1/2 cup granulated sugar mixed with 1 tablespoon ground cinnamon

Instructions

  1. Prepare the Baking Sheet: Line a large half-sheet baking pan with parchment paper to prevent sticking and allow easy removal of the toffee once set.
  2. Cook the Toffee: In a large saucepan over medium heat, combine the butter, white sugar, and salt. Stir continuously until the butter is completely melted. Allow the mixture to come to a boil and continue cooking, stirring occasionally, until it reaches a deep golden color and the temperature hits 285°F (137°C) on a candy thermometer. This ensures the toffee is cooked to the perfect hard crack stage.
  3. Pour and Chill Toffee: Immediately pour the hot toffee mixture into the prepared baking sheet, spreading evenly. You may let the toffee set in the refrigerator for about 20 minutes if you want to leave it whole for later chocolate coating.
  4. Melt White Chocolate Wafers: While the toffee is setting, melt the Ghirardelli white melting wafers according to the package instructions, usually by microwaving in short intervals and stirring until smooth.
  5. Add Chocolate and Cinnamon Sugar: Pour the melted white chocolate evenly over the set toffee. Immediately sprinkle the cinnamon and sugar mixture generously over the chocolate. Allow this layered toffee to set completely in the refrigerator for another 40 minutes.
  6. Optional Cutting Method: For a more authentic Disneyland bakery appearance, after pouring the toffee into the pan, wait about 2 minutes and use a plastic knife to score the toffee into squares while it’s still soft. Repeat scoring lines several times as the toffee sets to create clean edges. Then refrigerate the scored toffee for 20 minutes to fully set before dipping each square individually into melted white chocolate, placing them on parchment paper, and sprinkling with cinnamon sugar. Let them set for another 40 minutes before serving.
  7. Serve: Once fully set, break the toffee into pieces or separate the dipped squares and enjoy the delicious churro-inspired treat.

Notes

  • Use a reliable candy thermometer to ensure the toffee reaches the correct temperature for the perfect hard crack texture.
  • Line your baking sheet with parchment paper for easy removal and cleanup.
  • The cinnamon sugar topping adds the signature churro flavor—don’t skip it!
  • Storing the toffee in an airtight container at room temperature will keep it fresh for up to two weeks.
  • Be cautious when handling hot sugar to avoid burns.
  • For a richer chocolate flavor, you may substitute or mix with milk or dark melting wafers.
