This Dark Chocolate Ganache Truffle recipe features rich, creamy truffles made from melted dark chocolate and heavy cream, coated in cocoa powder. Perfect for a decadent dessert or gifting, these truffles are simple to prepare and require minimal ingredients and time.

Ingredients

Ganache

  • 1 ½ cups dark chocolate chips
  • ½ cup heavy cream

Coating

  • 3 tablespoons cocoa powder

Instructions

  1. Add Chocolate: Place 1 ½ cups of dark chocolate chips into a large mixing bowl, preparing for the ganache base.
  2. Heat Cream: Heat ½ cup of heavy cream in a saucepan over medium heat until it starts to boil, stirring frequently to prevent burning. Allow it to bubble for an additional minute to ensure it's hot enough to melt the chocolate perfectly.
  3. Combine Mixture: Remove the saucepan from the heat immediately and pour the hot cream over the chocolate chips. Stir the mixture quickly and continuously until the chocolate is fully melted and the ganache is smooth.
  4. Chill Ganache: Cover the bowl and refrigerate the ganache for at least 2 hours. This chilling step allows the mixture to thicken and become firm enough to form truffles.
  5. Prepare Coating: Measure 3 tablespoons of cocoa powder into a small bowl to use for rolling the truffles.
  6. Shape Truffles: After the ganache has chilled adequately, scoop out spoonfuls (approximately 1 tablespoon per truffle) and roll them between your palms to form smooth balls.
  7. Coat Truffles: Roll each shaped truffle in the cocoa powder until completely coated, giving them their classic finish. Store truffles chilled until serving.

Notes

  • For a smoother texture, use high-quality dark chocolate with at least 60% cacao.
  • If ganache is too soft after chilling, extend refrigeration time until firm enough to shape.
  • Truffles can be stored in an airtight container in the refrigerator for up to one week.
  • For added flavor, consider adding a splash of vanilla extract or liqueur to the cream before heating.
  • Wear disposable gloves to make rolling easier and prevent sticking.
