Crockpot Catalina Chicken is a simple and flavorful slow-cooked dish featuring tender chicken breasts simmered in a tangy and sweet sauce made from Catalina dressing, peach preserves, and onion soup mix. This easy recipe requires minimal preparation and delivers a delicious one-pot meal perfect for busy weeknights.

Ingredients

Sauce Mixture

  • 1 cup Catalina Dressing
  • 1/2 cup Peach Preserves
  • 1 packet dry onion soup mix
  • 1/2 teaspoon red pepper flakes (optional for spice)

Chicken

  • 6 boneless, skinless chicken breasts

Thickener

  • 1 1/2 tablespoons cornstarch
  • 1 1/2 tablespoons water

Instructions

  1. Prepare the sauce mixture: In a bowl, thoroughly stir together the Catalina dressing, peach preserves, dry onion soup mix, and optional red pepper flakes until well combined, creating the flavorful sauce base for the chicken.
  2. Prepare the crockpot: Lightly spray the inside of a 6-quart crockpot with cooking spray to prevent sticking. Arrange the 6 boneless, skinless chicken breasts evenly in the bottom of the crockpot.
  3. Add sauce to chicken: Pour the prepared Catalina dressing mixture over the chicken breasts, ensuring they are well coated with the sauce for maximum flavor infusion during cooking.
  4. Slow cook the chicken: Cover the crockpot with its lid and cook on the LOW setting for 4 to 5 hours, allowing the chicken to become tender and absorb the sauce flavors.
  5. Thicken the sauce: In a small bowl, dissolve the cornstarch in 1 1/2 tablespoons of water to create a slurry. Stir this mixture into the liquid in the crockpot. Cover and continue cooking for an additional 15 to 20 minutes to thicken the sauce before serving.

Notes

  • Optional red pepper flakes add a mild heat, but you can omit if preferred.
  • Chicken breasts can be substituted with thighs if desired; adjust cooking time accordingly.
  • Serve with rice, mashed potatoes, or steamed vegetables to complete the meal.
  • Leftover chicken can be refrigerated for up to 3 days.
  • For a thicker sauce, extend the final cooking time after adding the cornstarch slurry.
