Ingredients

Vegetables & Aromatics

  • 1 onion, diced
  • 4 carrots, chopped
  • 3 celery stalks, chopped
  • 2 Yukon potatoes, cut into bite-sized pieces (about 4 cups)
  • 3-4 garlic cloves, minced
  • 1 cup frozen corn
  • ½ to 1 cup frozen peas

Meat & Protein

  • 2 lb lean ground beef

Canned & Sauces

  • 3 cans (15 oz each) fire-roasted tomatoes
  • 1 cup tomato sauce
  • 6 oz tomato paste
  • 4 cups beef broth (plus more for thinner broth)
  • 1 tsp Worcestershire sauce

Seasonings & Oils

  • 1 tablespoon olive oil
  • 1 tablespoon Italian seasoning
  • ½ teaspoon onion powder
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 bay leaves

Instructions

  1. Combine Vegetables and Tomatoes: In the crock pot, add the diced potatoes, chopped carrots, celery, fire-roasted tomatoes, tomato sauce, minced garlic, bay leaves, Italian seasoning, onion powder, sea salt, pepper, and optional red pepper flakes. Stir well to combine all ingredients evenly.
  2. Sauté Onions and Brown Beef: Heat olive oil in a skillet over medium-high heat. Add the diced onions and sauté until translucent, about 3-4 minutes. Add the ground beef to the skillet and cook until browned and no longer pink, breaking it apart with a spoon. Drain any excess grease from the meat, then transfer the cooked mixture to the crock pot with the vegetables.
  3. Add Broth and Worcestershire Sauce: Pour the beef broth and Worcestershire sauce into the crock pot. Stir everything together thoroughly to combine the flavors.
  4. Slow Cook the Soup: Cover the crock pot and cook on low heat for 6-8 hours or on high for 3-5 hours. The soup is ready when the carrots and celery are tender and the potatoes are fork-tender.
  5. Add Frozen Peas, Corn, and Tomato Paste: About 15-20 minutes before serving, stir in the frozen peas, frozen corn, and tomato paste. The tomato paste will thicken the broth; adjust the amount to your preferred soup consistency.
  6. Adjust Seasonings and Serve: Taste the soup and adjust seasoning if necessary. If you prefer a thinner broth, add more beef broth. Serve the soup hot, optionally topped with shredded cheese for added richness.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • For a vegetarian version, omit the beef and use vegetable broth with additional beans or lentils.
  • This soup freezes well for up to 3 months; thaw overnight in the refrigerator before reheating.
  • Adjust red pepper flakes according to desired spice level.
