Ingredients
Meat and Seasoning
1 pound lean ground beef
1 packet taco seasoning
½ cup water
2 tablespoons dried minced onion
2 cloves garlic, minced
½ cup beef broth
Beans and Cheese
15 ounce can refried beans
1½ cups shredded Mexican cheese blend (cheddar cheese or Cheddar Jack cheese)
Other
10 8-inch flour tortillas
Nonstick cooking spray (such as olive-oil spray)
Instructions
Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F (220°C) and line a 10x15-inch or larger baking sheet with parchment paper to prevent sticking and make cleanup easier.
Brown the Ground Beef: In a large skillet over medium heat, brown the lean ground beef until fully cooked. Drain off any excess fat, then return the beef to the skillet.
Add Taco Seasoning and Water: Stir in the taco seasoning packet and ½ cup water into the browned beef. Cook while stirring until most of the water has evaporated and the seasoning is well distributed.
Incorporate Onion and Garlic: Add the dried minced onion and minced garlic to the skillet, cooking while stirring continuously for about 30 seconds until fragrant.
Add Refried Beans and Beef Broth: Mix in the refried beans and beef broth, breaking up the beans and stirring everything together until fully combined. Remove the skillet from heat.
Assemble Tacos: Place one flour tortilla on the prepared baking sheet. Spread about 3 to 4 tablespoons of the beef and bean mixture over the lower half of the tortilla.
Add Cheese and Fold: Sprinkle 2 to 3 tablespoons of shredded Mexican cheese blend over the beef and bean mixture. Fold the tortilla over gently and press to seal.
Repeat and Space: Repeat the assembly process with the remaining tortillas, beef and bean mixture, and cheese, spacing each taco about 1 inch apart on the baking sheet. Use an additional parchment-lined baking sheet if needed.
Apply Cooking Spray: Lightly spray the tops of the folded tacos with nonstick cooking spray, preferably an olive-oil based spray, to help them crisp evenly.
Bake: Place the baking sheet(s) in the preheated oven and bake for 10 to 12 minutes or until the cheese is melted and the tortillas turn golden brown and crispy.
Serve: Remove from oven and serve the crispy baked tacos warm with optional sides such as pico de gallo, salsa, guacamole, or sour cream for added flavor.
Notes
For extra crispiness, you can flip the tacos halfway through baking.
Use whole wheat tortillas for a healthier option.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or air fryer.
Add diced jalapeños or hot sauce to the beef mixture if you prefer spicy tacos.
To make it vegetarian, substitute ground beef with a plant-based protein and use vegetable broth instead of beef broth.
