These Crispy Baked Tacos are a delicious and easy-to-make dinner option featuring seasoned ground beef and melted cheddar cheese folded inside baked tortillas for a satisfyingly crunchy texture. Perfect for a quick meal that offers the classic taco flavors with a healthier twist by baking instead of frying.

Ingredients

Meat & Seasoning

  • 1 lb lean ground beef
  • 1 small onion, finely diced
  • 1-2 tablespoons homemade taco seasoning

Tacos & Toppings

  • 8-10 small corn or flour tortillas
  • 3 cups shredded cheddar cheese
  • Oil spray

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper to prevent sticking and make cleanup easier.
  2. Cook Beef & Onion: In a large skillet over medium heat, cook the lean ground beef with the finely diced onion until the onion softens and the beef is fully browned, breaking up the meat as it cooks.
  3. Drain Fat: Once cooked, drain off any excess fat from the skillet to keep the tacos from becoming greasy.
  4. Season Meat: Add your homemade taco seasoning one tablespoon at a time to the cooked beef mixture, stirring well until the desired flavor is achieved. Then set the meat mixture aside.
  5. Assemble Tacos: Take each tortilla and place about ⅓ cup of shredded cheddar cheese on the bottom half, add 2 tablespoons of the seasoned taco meat on top of the cheese, then sprinkle another layer of cheese on top. Fold the tortilla in half to enclose the filling so it holds together during baking.
  6. Prepare for Baking: Place each folded taco on the parchment-lined sheet pan and lightly spray the outside of the tacos with oil spray to ensure they crisp nicely in the oven.
  7. Bake Tacos: Bake in the preheated oven for 8-9 minutes, flipping each taco halfway through the baking time to ensure both sides become golden and crispy.
  8. Serve: If desired, carefully open the tacos and add fresh toppings like shredded lettuce, salsa, sour cream, diced fresh tomato, or any other favorite toppings before serving.

Notes

  • Using oil spray helps achieve a crispy outside without deep frying.
  • For a vegetarian version, substitute the ground beef with a plant-based meat alternative or sautéed vegetables.
  • Homemade taco seasoning lets you control the sodium and spice levels.
  • Flour tortillas will produce a softer taco; corn tortillas will be crispier when baked.
  • Make sure to flip tacos halfway to get an even crisp on both sides.
