Ingredients

Chicken and Coating

  • 2 large boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 3 teaspoons Italian seasonings
  • ⅓ cup flour
  • 4 tablespoons shredded Parmesan cheese
  • 3 tablespoons olive oil

Sauce

  • 2 ½ cups chicken broth
  • 1 beef bouillon cube (or 1 teaspoon better than bouillon)
  • 1 teaspoon low sodium soy sauce (can substitute Worcestershire sauce)
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon mustard powder
  • 3 tablespoons butter
  • 10 whole garlic cloves
  • 3 tablespoons flour
  • ½ cup heavy cream
  • ½ cup Parmesan cheese (optional, for extra richness)

Instructions

  1. Prep Work: In a large measuring cup with a spout, combine the chicken broth, beef bouillon cube, soy sauce, onion powder, mustard powder, and dried thyme. Set aside this flavorful broth mixture. On a plate, mix together the flour and 4 tablespoons of Parmesan cheese. Measure out the remaining ingredients so they are ready to use.
  2. Prepare the Chicken: Slice each chicken breast in half lengthwise to create 2 to 3 thinner cutlets. Place the chicken between two sheets of plastic wrap and gently pound with the textured side of a meat mallet until the thickness is about ½ inch. Pat the chicken dry completely with paper towels.
  3. Season and Dredge: Season both sides of the chicken slices with Italian seasoning, salt, and pepper. Dredge each piece thoroughly in the flour and Parmesan mixture, tapping off excess flour to avoid clumps.
  4. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Working in batches if necessary, sear the chicken pieces for 4-5 minutes on each side until a beautiful golden crust forms. Remove the chicken and set aside on a plate.
  5. Make the Garlic Sauce: Reduce heat to medium or medium-low and melt the butter in the same skillet. Use a silicone spatula to scrape up any browned bits on the bottom; this adds flavor to your sauce. Add the whole garlic cloves and cook for 6-7 minutes until they soften and caramelize lightly.
  6. Add Flour: Sprinkle the 3 tablespoons of flour over the garlic and butter, stirring constantly. Cook for 1-2 minutes until the raw flour smell disappears, forming a roux to thicken the sauce.
  7. Incorporate Broth Mixture: Slowly add the prepared chicken broth mixture in splashes while stirring continuously to keep the sauce smooth.
  8. Add Cream and Cheese: Stir in the heavy cream and bring the sauce to a boil. Reduce heat to low and gradually add ½ cup Parmesan cheese while stirring until melted and the sauce is creamy and velvety.
  9. Simmer the Chicken: Return the seared chicken breasts along with any accumulated juices back into the skillet. Spoon sauce over the top, cover partially with a lid, and let it simmer gently for 5 minutes so the chicken cooks through and absorbs the sauce flavors.
  10. Serve: Garnish with chopped fresh parsley if desired. Serve this creamy garlic chicken alongside mashed potatoes and roasted green beans for a delicious, hearty meal.

Notes

  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
  • Heavy cream can be substituted with half-and-half for a lighter sauce, but the sauce may be less rich.
  • Use fresh garlic cloves for the best flavor, and cook them slowly to avoid burning and bitterness.
  • If preferred, the Parmesan cheese can be omitted from the sauce for a milder flavor profile.
  • This dish pairs beautifully with mashed potatoes, rice, or crusty bread to soak up the delicious sauce.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
