A refreshing and creamy cucumber salad featuring thinly sliced cucumbers and onions tossed in a tangy sour cream-based dressing with fresh dill and garlic. Perfect as a light side dish or summer appetizer, this salad comes together quickly and offers a balance of crisp textures and smooth flavors.

Ingredients

Produce

  • 1 1/2 lbs cucumbers (2 English cucumbers or 7-10 small cucumbers)
  • 1/2 medium red or sweet yellow onion (thinly sliced)
  • 1 Tbsp fresh or frozen dill (chopped)
  • 1 garlic clove (pressed or grated)

Dressing

  • 1/2 cup sour cream (full-fat or reduced-fat)
  • 1 1/2 tsp fresh lemon juice (optional)
  • 1/2 tsp fine sea salt
  • Pinch black pepper (or to taste)

Instructions

  1. Make the Dressing: In a small bowl, combine the sour cream, lemon juice if using, pressed garlic, chopped dill, salt, and black pepper. Stir well until all ingredients are fully blended and set the dressing aside while preparing the salad.
  2. Chop Cucumbers and Onion: Peel cucumbers if desired, then slice them into thin rounds or half-moons for larger cucumbers. Add the sliced cucumbers into a large mixing bowl. Thinly slice the red or yellow onion and add to the cucumbers.
  3. Add Dressing and Serve: Just before serving, pour the prepared dressing over the cucumbers and onions. Gently toss everything to evenly coat the vegetables with the creamy dressing. The salad can be stored in the refrigerator and will stay fresh for about 2-3 hours after dressing is added.

Notes

  • The salad is best enjoyed fresh within a few hours of dressing to maintain cucumber crunch.
  • For a lighter variation, use reduced-fat sour cream or swap with Greek yogurt.
  • If you prefer extra zing, add more lemon juice or a splash of vinegar to the dressing.
  • Fresh dill is preferred for bright flavor but frozen dill works well in a pinch.
  • This salad pairs beautifully with grilled meats or as a cooling side for spicy dishes.
