This Cinnamon Swirl Zucchini Bread is a moist and flavorful quick bread that combines the subtle freshness of grated zucchini with a warm cinnamon-sugar swirl. Perfect for breakfast, snack time, or dessert, this easy-to-make recipe results in a tender loaf with a delightful cinnamon crunch in every bite.

Ingredients

Wet Ingredients

  • 1 ½ cups grated zucchini (about 1-2 small to medium zucchinis)
  • ¾ cup sugar
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 eggs

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder

Cinnamon Swirl

  • ¼ cup sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8-inch bread pan with nonstick foil and spray it with cooking spray to ensure easy removal of the bread.
  2. Mix Wet Ingredients: In a large bowl, combine the grated zucchini, ¾ cup sugar, vegetable oil, vanilla extract, and eggs. Mix thoroughly until well blended.
  3. Combine Dry Ingredients: In a separate smaller bowl, whisk together the flour, baking soda, ½ teaspoon cinnamon, salt, and baking powder. Gradually add the dry ingredients to the wet mixture and stir until just combined and no dry flour remains.
  4. Prepare Cinnamon Swirl: In a small bowl, mix the ¼ cup sugar with 1 tablespoon cinnamon to create the cinnamon-sugar swirl topping.
  5. Layer Batter and Swirl: Pour one-third of the batter into the prepared bread pan. Sprinkle half of the cinnamon-sugar mixture evenly over the batter. Add another one-third of the batter on top, followed by the remaining cinnamon-sugar mixture. Finish by topping with the last one-third of the batter.
  6. Bake: Place the bread pan in the preheated oven and bake for 35 to 45 minutes. Start checking at 35 minutes by inserting a toothpick into the center; the bread is done when the toothpick comes out clean. Baking times may vary depending on altitude, humidity, and oven calibration, so check every 5 minutes after 35 minutes if needed.

Notes

  • You can shred zucchinis using a box grater or a food processor for convenience.
  • Make sure to squeeze out any excess moisture from the zucchini to avoid a soggy bread.
  • The cinnamon-sugar swirl adds a delightful texture and flavor contrast, but you can skip it for a simpler bread.
  • Store the bread wrapped in foil or in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • For a nuttier flavor, consider adding ½ cup chopped walnuts or pecans to the batter.
