Ingredients

Dry Ingredients

  • 2 cups (264g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt

Wet Ingredients

  • 1 1/2 cups (395g) ripe and mashed banana (about 3 large bananas)
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (55g) light brown sugar, packed
  • 1/4 cup (55g) unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (120g) sour cream

Cinnamon Sugar Topping

  • 1/2 cup (100g) granulated sugar
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Grease and line a 9×5 inch loaf pan with parchment paper, placing a strip along the width to make removal easy after baking.
  2. Mix Dry Ingredients: In a small bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt until combined. Set aside.
  3. Combine Wet Ingredients: In a large bowl, whisk mashed banana with granulated sugar, light brown sugar, and melted butter until well combined and smooth.
  4. Add Eggs, Vanilla, and Sour Cream: Whisk in the eggs, vanilla extract, and sour cream into the wet mixture until fully integrated.
  5. Incorporate Dry Ingredients: Pour the dry ingredients into the wet ingredients and gently fold using a rubber spatula until just combined—avoid overmixing.
  6. Prepare Cinnamon Sugar: In a small dish, combine the granulated sugar and ground cinnamon that will be used for topping.
  7. Layer Batter and Topping: Pour half of the batter into the prepared loaf pan, spreading it evenly. Sprinkle half of the cinnamon sugar mixture on top. Spoon the remaining batter over the first layer and spread evenly, then sprinkle the remaining cinnamon sugar on top.
  8. Bake: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs. The loaf should be puffed with a golden crust and visible large cracks.
  9. Cool and Serve: Let the bread cool in the pan for 20-30 minutes before lifting it out using the parchment strip. Slice and serve warm for best taste, or enjoy at room temperature.

Notes

  • Ensure bananas are ripe for maximum sweetness and moisture.
  • Do not overmix the batter to keep the bread tender and fluffy.
  • Using parchment paper makes it easier to remove the bread from the pan without sticking.
  • The cinnamon sugar topping creates a delightful crunchy crust; adjust the amount based on your preference.
  • This bread keeps well stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
