This fresh and zesty Cilantro Lime Dressing combines the bright flavors of lime and cilantro with a touch of sweetness and spice. Perfect for salads, grilled vegetables, or as a marinade, it’s quick to prepare using a blender or food processor and can be customized to your taste preferences.

Ingredients

Base Ingredients

  • ½ cup extra-virgin olive oil
  • ½ cup lime juice (from about 4 to 6 limes)
  • 1 cup loosely packed cilantro (mostly leaves, small stems are ok, from about 1 small bunch)
  • 1 tablespoon honey or maple syrup, to taste
  • 1 teaspoon Dijon mustard
  • ½ teaspoon ground cumin
  • Scant ½ teaspoon fine salt, to taste
  • 1 clove garlic, roughly chopped

Optional Ingredients

  • 1 small jalapeño, seeds and ribs removed, and roughly chopped (for spice)
  • Pinch of red pepper flakes (for spice)
  • 2 tablespoons tahini or ½ cup whole-milk Greek yogurt (for creamy dressing)

Instructions

  1. Combine Ingredients: In a food processor or small blender, add the extra-virgin olive oil, lime juice, cilantro, honey or maple syrup, Dijon mustard, ground cumin, salt, garlic, and any optional ingredients such as jalapeño or tahini. Blend until the mixture is completely smooth with tiny flecks of cilantro.
  2. Taste and Adjust: Taste the dressing and adjust the flavor as needed. If it is too tart, add more honey by teaspoon increments. If it tastes bitter or lacks punch, add additional salt. For extra spice, incorporate a pinch or two of red pepper flakes and blend again to combine thoroughly.
  3. Serve or Store: Serve the dressing immediately to enjoy its fresh flavors. Alternatively, transfer to a covered jar and refrigerate for up to 1 week to use later.

Notes

  • This dressing can be used on salads, as a marinade for grilled meats or vegetables, or as a sauce for bowls.
  • Adjust the sweetness and spice to suit your personal taste preferences.
  • The creamy version with tahini or Greek yogurt offers a richer texture and flavor.
  • Store the dressing in the refrigerator and shake well before using if it separates.
  • Fresh lime juice is preferred for the best flavor, but bottled lime juice can be used in a pinch.
