Ingredients

Dressing

  • 6 ounces Plain Greek Yogurt
  • 1/4 cup Sour cream
  • 2 tablespoons Mayonnaise
  • 2 tablespoons Honey
  • 1/2 Lemon (juiced)
  • Salt & pepper, to taste

Salad

  • 1 pound Boneless skinless chicken breast (diced)
  • 1 cup Sliced red grapes
  • 1 cup Diced apple (Honeycrisp or Gala)
  • 2 Celery stalks (sliced)
  • 2 Green onions (sliced)
  • 1/2 cup Slivered almonds (toasted optional)
  • 1/2 cup Dried cranberries
  • 2 tablespoons Fresh parsley (roughly chopped)

Instructions

  1. Prepare the Dressing: In a small bowl, mix together the plain Greek yogurt, sour cream, mayonnaise, honey, and lemon juice. Add a pinch of salt and pepper, then taste and adjust the seasoning as needed. Set the dressing aside.
  2. Combine Salad Ingredients: In a large bowl, mix the diced chicken breast, sliced red grapes, diced apple, sliced celery, sliced green onions, slivered almonds, dried cranberries, and chopped fresh parsley. If you prefer toasted almonds, spread them out on a cookie sheet and bake in a 400°F (200°C) oven for about 5 minutes until golden, then add to the salad.
  3. Add Dressing and Toss: Pour the desired amount of the prepared dressing over the salad ingredients. Stir well until everything is evenly coated. Taste and add more salt if needed. Refrigerate any leftover dressing for future use.

Notes

  • To toast almonds, spread them evenly on a baking sheet and bake at 400°F for 5 minutes until golden and fragrant.
  • You can substitute chicken breast with cooked rotisserie chicken for convenience.
  • Adjust honey and lemon juice in the dressing to balance sweetness and acidity to your preference.
  • Serve chilled or at room temperature.
  • This salad can be stored covered in the refrigerator for up to 2 days for best freshness.
