This Chai-Spiced Nut Butter is a creamy, flavorful spread infused with warming chai spices like cinnamon, ginger, cardamom, nutmeg, and cloves. Made from roasted cashews and almonds, sweetened with coconut sugar, and seasoned with a hint of sea salt, it's perfect for spreading on toast, pairing with fruit, or adding to baked goods. The homemade nut butter offers a naturally smooth texture and a spicy-sweet kick that brings a cozy chai taste any time of day.

Ingredients

Nuts

  • 2 cups raw cashews
  • 1 cup raw almonds (or substitute pecans or additional cashews)

Spices & Sweetener

  • 1/4 cup coconut sugar (or substitute brown sugar)
  • 1 1/2 tablespoons ground cinnamon
  • 1/2 tablespoon ground ginger
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon sea salt

Instructions

  1. Roast the Nuts: Preheat your oven to 350°F (176°C). Spread the raw cashews and almonds evenly on a bare baking sheet. Roast them for 8-10 minutes until they turn a light golden color, being careful not to let them brown too deeply.
  2. Process to Nut Butter: Transfer the roasted nuts carefully to a food processor or high-speed blender. Process until completely smooth, which can take 10-12 minutes. Scrape down the sides occasionally and allow the machine breaks if it overheats. You will notice stages from a fine meal to a thick ball, and finally a creamy, slightly runny nut butter.
  3. Add Spices and Sweetener: Once the nuts are smooth, add the coconut sugar, ground cinnamon, ginger, cardamom, nutmeg, cloves, and sea salt. Process again for about 1 minute to incorporate all ingredients well.
  4. Adjust Flavor: Taste the nut butter and adjust the seasoning as needed. You may wish to add more coconut sugar, spices, or sea salt depending on your preference and the freshness of your spices. Process again briefly to combine.
  5. Serve and Store: Enjoy this chai-spiced nut butter spread on apple slices, toast, roasted sweet potatoes, or incorporated into baked goods. Transfer the nut butter to a jar. Store it at room temperature for a spreadable consistency or refrigerate to preserve freshness longer.
  6. Storage Guidelines: This nut butter keeps for approximately 3-4 weeks at room temperature or up to 2 months or more when refrigerated.

Notes

  • Be patient while processing the nuts; it can take up to 12 minutes for the oils to release and achieve a smooth texture.
  • Use a high-speed blender or food processor with enough power to process nuts smoothly.
  • Substitute the almonds with pecans or more cashews if desired.
  • You can swap coconut sugar for brown sugar if preferred.
  • The nut butter can be used in various ways such as a spread, in baking, or as a topping for fruits and vegetables.
  • Allow breaks during processing to avoid overheating your appliance.
  • Store in an airtight container to maintain freshness and prevent rancidity.
