Ingredients

Meatballs

  • 1 lb ground beef
  • 1 yellow onion, diced
  • 1 cup grated zucchini, liquid squeezed out
  • 1/2 cup unseasoned breadcrumbs
  • 1/4 cup parsley, finely chopped
  • 1/4 cup cilantro, finely chopped
  • 1 egg
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cumin
  • 1/4 tsp cinnamon

Sauce and Potatoes

  • 5 golden potatoes, peeled
  • 1 yellow onion, sliced
  • 2 cups water
  • 1/3 cup olive oil
  • 2 roma tomatoes, grated or substitute 1/3 cup crushed tomatoes
  • 3 tbsp date syrup
  • 2 tbsp paprika
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1/4 tsp turmeric
  • Fresh parsley, for garnish

Instructions

  1. Prepare the caramelized onions: Heat 2 tablespoons of olive oil in a large pot or braiser pan over medium heat. Add the diced yellow onions and cook for 10-15 minutes, stirring every few minutes, until the onions are deeply browned and caramelized.
  2. Make the meatball mixture: Transfer the caramelized onions to a large bowl. Add the ground beef, grated zucchini, finely chopped parsley and cilantro, egg, breadcrumbs, paprika, turmeric, salt, black pepper, cumin, and cinnamon. Mix everything thoroughly to combine.
  3. Form the meatballs: Shape the mixture into about 16 gently flattened meatballs. Set aside while preparing the sauce.
  4. Start the sauce base: In the same pot, add 1/3 cup olive oil over medium heat. Add the sliced yellow onion and cook for 5-6 minutes until softened, stirring occasionally.
  5. Add potatoes and spices: Add the peeled and cut golden potatoes along with paprika, salt, black pepper, turmeric, grated tomatoes (or crushed tomatoes), and date syrup. Stir well to evenly coat the potatoes with the spices and tomato mixture.
  6. Simmer meatballs and potatoes: Pour in 2 cups of water, then carefully nestle the prepared meatballs into the sauce, distributing them evenly in the pot.
  7. Cook thoroughly: Cover the pan and bring the sauce to a boil. Once boiling, reduce the heat to low and let the dish simmer gently for 45 minutes, allowing the meatballs to cook through and the potatoes to become tender.
  8. Optional finishing: For a browned top, place the covered pan under a broiler for 2-3 minutes after cooking, watching carefully to avoid burning.
  9. Garnish and serve: Sprinkle fresh chopped parsley over the dish before serving to add brightness and color.

Notes

  • Be sure to squeeze out excess liquid from the grated zucchini to prevent the meatball mixture from becoming too wet.
  • Using a braiser pan or a heavy-bottomed pot helps distribute heat evenly for slow simmering.
  • Date syrup adds a natural sweetness that balances the savory spices—if unavailable, substitute with honey or maple syrup.
  • Broiling at the end is optional but creates a lovely browned crust on the meatballs.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
