Ingredients

Caramelized Onion Aioli

  • 2 tbsp olive oil
  • 1/2 large yellow onion, finely diced
  • 1 1/2 tsp brown sugar
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tsp apple cider vinegar
  • 1/2 tsp garlic powder
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Burgers

  • 1 lb ground beef (80-85% lean)
  • Kosher salt, for seasoning
  • Freshly ground black pepper, for seasoning

To Serve

  • Roasted potatoes or French fries (homemade or frozen)
  • Sliced tomatoes
  • Romaine lettuce, chopped

Instructions

  1. Make Caramelized Onion Aioli: Heat the olive oil in a skillet over medium heat until shimmering. Add the finely diced onion and a pinch of salt, cooking for 10 minutes while stirring occasionally until the onions soften. Stir in the brown sugar and continue cooking for 5-10 more minutes, until the onions achieve a deep golden brown color and a jammy consistency. Add a splash of water if they begin to burn or crisp.
  2. Mix Aioli Ingredients: Transfer the caramelized onions to a bowl. Stir in mayonnaise, Greek yogurt, apple cider vinegar, and garlic powder. Season with salt and freshly ground black pepper to taste. Set the aioli aside.
  3. Prepare Burgers: Divide the ground beef into 5-6 equal portions and shape each into a patty. Season both sides generously with kosher salt and black pepper. Wipe out the skillet used for the onions, then return it to medium-high heat. Sear each burger patty for 2-3 minutes per side or until cooked through to your preferred doneness.
  4. Assemble Burger Bowls: Arrange chopped romaine lettuce in bowls, top with sliced tomatoes and seared burger patties. Add roasted potatoes or fries on the side and finish by dolloping the caramelized onion aioli over the burgers. Serve immediately and enjoy!

Notes

  • If you prefer, substitute the Greek yogurt with sour cream or extra mayonnaise.
  • Make sure to monitor the onions carefully to prevent burning while caramelizing.
  • Ground beef with 80-85% lean fat gives the best balance for juicy burger patties.
  • You can make this recipe gluten-free by using gluten-free fries or roasted potatoes.
  • Leftover aioli can be stored in an airtight container in the refrigerator for up to 3 days.
