Ingredients

For the Burger Bowls

  • ½ Tablespoon avocado or olive oil
  • ½ yellow onion, chopped
  • 1 lb lean ground beef (or substitute ground turkey or ground chicken)
  • 1 teaspoon yellow mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 4-6 cups shredded romaine or iceberg lettuce
  • 2 cups diced tomatoes (preferably cherry tomatoes)
  • 1 cup thinly sliced red onion
  • 1 cup chopped dill pickles
  • 1 avocado, sliced (optional)
  • 1 bag frozen sweet potato fries or homemade sweet potato fries

For the Big Mac Sauce

  • ¼ cup plain Greek yogurt
  • ¼ cup mayonnaise (avocado oil mayo preferred)
  • 1 Tablespoon ketchup
  • ½ teaspoon yellow mustard
  • 1 Tablespoon pickle juice
  • 1 Tablespoon finely chopped pickles
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt (or to taste)

Instructions

  1. Cook Fries: Cook the sweet potato fries according to the package instructions or your preferred homemade method. While the fries are cooking, move on to the next steps.
  2. Sauté Onions: In a skillet over medium heat, add oil and the chopped yellow onion. Sauté for 3-4 minutes until the onions become soft and fragrant.
  3. Cook the Ground Meat: Add the ground beef to the skillet along with yellow mustard, garlic powder, onion powder, sea salt, and black pepper. Cook for about 7-8 minutes, stirring occasionally and breaking up the meat with a spatula until fully browned and cooked through. Remove from heat and set aside.
  4. Prepare Big Mac Sauce: In a small bowl, whisk together the Greek yogurt, mayonnaise, ketchup, yellow mustard, pickle juice, finely chopped pickles, garlic powder, onion powder, and salt until smooth and well combined. Adjust salt to taste if necessary.
  5. Assemble the Bowls: Divide the shredded lettuce evenly among 4 bowls. Top each bowl with the cooked ground beef, diced tomatoes, sliced red onion, chopped dill pickles, avocado slices if using, and the cooked sweet potato fries.
  6. Drizzle and Serve: Drizzle each bowl generously with the prepared Big Mac sauce. Serve immediately and enjoy your flavorful, low-carb burger bowls.
