Ingredients

Main Ingredients

  • 2 (14 ounce) cans chickpeas, drained and rinsed
  • 8 ounces cream cheese, softened
  • ⅔ cup buffalo wing sauce
  • ⅓ cup ranch dressing
  • ⅓ cup blue cheese dressing
  • ¼ cup mayonnaise
  • 2 cups freshly grated sharp cheddar cheese
  • ½ cup crumbled gorgonzola cheese
  • 4 green onions, thinly sliced
  • ⅓ cup chopped fresh cilantro
  • 1 teaspoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika

Instructions

  1. Preheat Oven: Preheat the oven to 400 degrees F to prepare for baking the dip.
  2. Prepare Chickpeas: After rinsing the chickpeas, set aside ½ cup and place them on a paper towel to gently pat dry. Leave them aside until ready to fry later.
  3. Mash Chickpeas: In a small bowl, coarsely mash the remaining chickpeas using a fork, meat masher, or potato masher to create a textured base for the dip.
  4. Mix Cream Cheese and Sauces: In a large bowl, use an electric hand mixer to beat the softened cream cheese until smooth and creamy. Beat in buffalo wing sauce, ranch dressing, blue cheese dressing, and mayonnaise until fully combined.
  5. Combine with Chickpeas and Cheese: Stir the coarse mashed chickpeas into the cream cheese mixture. Fold in almost all of the grated cheddar cheese, reserving a bit for the topping. Stir in half of the crumbled gorgonzola cheese.
  6. Add Herbs: Stir in half of the sliced green onions and chopped cilantro into the mixture for fresh flavor.
  7. Assemble and Bake: Spread the dip mixture evenly in an 8 or 9-inch round baking dish. Top with the remaining cheddar and gorgonzola cheeses. Bake for 25 to 30 minutes until the dip is bubbly and warmed through.
  8. Prepare Crunchy Chickpeas: While the dip bakes, heat olive oil in a skillet over medium heat. Add the reserved dried chickpeas and sprinkle with garlic powder and smoked paprika. Cook, stirring frequently, until the chickpeas become crispy and golden brown.
  9. Garnish and Serve: Remove the baked dip from the oven and top it with the remaining green onions, cilantro, and the fried crunchy chickpeas. Drizzle with additional buffalo wing sauce if desired. Serve warm with crackers, carrots, celery, chips, or crostini.

  • You can prepare the mashed chickpeas in advance to save time before assembling the dip.
  • Use a mix of your favorite cheeses for a variation in flavor.
  • This dip is best served warm but can be reheated gently before serving.
