Ingredients

Buffalo Chicken Filling

  • 1 cup cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 3 ounces cream cheese, at room temperature
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped scallions

Slider Assembly

  • 1 package dinner rolls, halved lengthwise
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese, melted
  • 1 cup shredded pepper jack cheese
  • 1/3 cup pickled jalapeños (optional)

Garlic Butter Topping

  • 4 tablespoons salted butter
  • 2 tablespoons hot sauce
  • 2 teaspoons Worcestershire sauce
  • 2 cloves garlic, chopped
  • 2 tablespoons poppy seeds

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the optimal temperature for baking the sliders evenly.
  2. Prepare Buffalo Chicken Mixture: In a mixing bowl, combine the cooked shredded chicken, buffalo sauce, softened cream cheese, chopped cilantro, and scallions. Mix well until all ingredients are incorporated to create a creamy, spicy filling.
  3. Assemble Sliders: Place the bottom halves of the halved dinner rolls on a parchment-lined baking sheet. Layer the melted cheddar cheese evenly over the bottoms, then drizzle or spoon ranch dressing on top. Spread the buffalo chicken mixture evenly over the ranch, sprinkle with extra herbs if desired, add the shredded pepper jack cheese, and scatter the pickled jalapeños if using. Cover with the top halves of the rolls.
  4. Make Garlic Butter Topping: In a small bowl, combine the salted butter, hot sauce, Worcestershire sauce, and chopped garlic. Stir until smooth. Spread this garlic butter mixture evenly over the top halves of the slider rolls and then sprinkle poppy seeds on top for added flavor and texture.
  5. Bake Covered: Cover the entire baking sheet with aluminum foil to prevent excessive browning and bake in the preheated oven for 10 minutes to allow the flavors to meld and the cheeses to start melting.
  6. Bake Uncovered: Remove the foil and continue baking for an additional 10 to 15 minutes until the cheese is fully melted, bubbly, and the tops are golden brown.
  7. Serve Warm: Remove the sliders from the oven, slice them apart, and serve immediately while warm and gooey for the best experience.

Notes

  • For extra spice, add more hot sauce to the buffalo chicken mixture or sprinkle cayenne pepper before baking.
  • Pickled jalapeños are optional but add a nice tangy kick; omit if you prefer milder sliders.
  • Make sure the cream cheese is softened to room temperature for easier mixing and smoother filling.
  • You can prepare the buffalo chicken mixture ahead of time and refrigerate up to 24 hours before assembly.
  • If melted cheddar cheese is not available, shredded cheddar can be used directly during assembly and will melt in the oven.
