These Brown Sugar Glazed Carrots are a sweet and savory side dish featuring tender carrots cooked to perfection and coated in a rich, buttery brown sugar glaze. Garnished with fresh parsley, this easy-to-make recipe elevates simple carrots into a delicious accompaniment for any meal.

Ingredients

Carrots

  • 1 1/2 lbs. carrots, peeled and sliced on the bias into ½ inch pieces
  • 2 teaspoons salt, divided

Glaze

  • 1 1/2 tablespoons salted butter
  • 1/2 cup packed light brown sugar (can use dark brown sugar)

Garnish

  • Freshly chopped parsley (optional)

Instructions

  1. Prepare the Carrots: Place the peeled and sliced carrots in a medium-size pot. Add 1 ½ teaspoons of salt and then cover the carrots completely with cold water, ensuring the water level is at least 1 inch above the carrots. Stir the mixture gently to distribute the salt.
  2. Cook the Carrots: Bring the pot to a boil over high heat. Once boiling, reduce the heat to a simmer and cook for 10 to 20 minutes depending on the size of the carrot pieces and your preferred tenderness. The carrots should be tender when pierced with a fork but not mushy.
  3. Drain and Return Carrots: Drain the cooked carrots thoroughly in a colander. Return the drained carrots to the same pot for glazing.
  4. Make the Brown Sugar Glaze: Cut the butter into pieces and add it to the pot with the carrots. Place the pot over medium heat and melt the butter, stirring to coat the carrots evenly. Once the butter is nearly melted, add the brown sugar and continue to cook over medium heat. Stir occasionally until the brown sugar dissolves completely and the glaze thickens slightly, about 5 minutes. Remove the pot from the heat and stir in the remaining ½ teaspoon of salt.
  5. Serve and Garnish: Transfer the glazed carrots to a serving dish and, if desired, sprinkle with freshly chopped parsley for a burst of color and fresh flavor. Serve warm.

Notes

  • Adjust cooking time for the carrots based on how firm or soft you prefer them.
  • Light or dark brown sugar can be used depending on your flavor preference; dark brown will give a deeper molasses flavor.
  • Fresh parsley garnish adds a nice fresh contrast but is optional.
  • For a dairy-free version, substitute butter with a plant-based alternative.
