This Blueberry-Lemon Angel Food Cake is a light and refreshing dessert perfect for summer gatherings. Featuring delicate slices of angel food cake grilled to golden perfection and topped with a creamy blend of nonfat vanilla Greek yogurt and blueberry jelly, it’s finished with fresh berries and a hint of lemon zest for a vibrant, patriotic treat.

Ingredients

Angel Food Cake

  • 4 slices angel food cake, each 1 - 1 1/2 inch thick (about 1/3 of a whole cake)

Sauce

  • 2/3 cup nonfat vanilla Greek yogurt
  • 1/4 cup blueberry jelly, preferably all-natural and fruit-sweetened (e.g., Fiordifrutta)

Topping

  • 1 cup fresh blueberries (optional substitution/addition: strawberries and raspberries for a patriotic red-white-and-blue dessert)
  • 1 teaspoon lemon zest (from about half a lemon)

Instructions

  1. Preheat and prepare grill: Start by preheating your grill and prepare it for indirect heat by turning off one side of the flames or setting it to a very low flame. This will help avoid burning the delicate angel food cake slices.
  2. Grill the angel food cake: Place each slice of angel food cake on the grill and cook for about 2 to 5 minutes per side until they become lightly toasted and golden. Monitor closely to prevent charring or burning.
  3. Mix the sauce: While the cake is grilling, combine the nonfat vanilla Greek yogurt and blueberry jelly in a bowl. Stir well until smooth and evenly mixed.
  4. Assemble and serve: Once the grilled angel food cake slices are ready, drizzle approximately a quarter of the blueberry-yogurt sauce (about 3 1/2 tablespoons) over each slice. Top each piece with about 1/4 cup fresh berries and sprinkle with 1/4 teaspoon lemon zest to finish.

Notes

  • Use a low flame or indirect heat on the grill to prevent the angel food cake from burning since it is delicate and can char quickly.
  • For a festive touch, you can add strawberries and raspberries along with the blueberries to create a patriotic red-white-and-blue dessert.
  • If you don’t have access to a grill, you may lightly toast the angel food cake slices in a toaster oven or on a stovetop griddle, but watch carefully to avoid burning.
  • Using all-natural fruit sweetened jelly adds a healthier touch and avoids excess refined sugars.
