Ingredients

Big Mac Sauce

  • 3 tbsp mayonnaise
  • 3 tbsp ketchup
  • 1 tsp apple cider vinegar or white wine vinegar
  • ½ tsp Tabasco or your favourite hot sauce
  • 2 tsp Worcestershire sauce
  • 1 tsp mustard

Tacos

  • 1 iceberg lettuce leaf (finely sliced)
  • 2 tbsp finely chopped dill pickles
  • 200 g ground beef (10% fat)
  • Salt and pepper to taste
  • 4 small flour tortillas
  • Vegetable oil for cooking
  • 8 slices of American cheese / American cheddar

Instructions

  1. Make the Big Mac Sauce: In a small bowl, whisk together mayonnaise, ketchup, vinegar, Tabasco, Worcestershire sauce, and mustard until smooth and well combined. Set aside for serving.
  2. Prepare the Lettuce and Pickles: Finely slice the iceberg lettuce leaf and chop the dill pickles finely. Have these ready before cooking the tacos to ensure quick assembly.
  3. Season and Shape the Beef: Mix the ground beef with salt and pepper evenly. Spread thin layers of this seasoned beef onto each flour tortilla, forming a layer that will cook into the taco's beef filling.
  4. Preheat the Cooking Surface: Heat a skillet or griddle over high heat until it is smoking hot, which is essential for proper smashing and searing of the beef.
  5. Cook the Smash Tacos: Add a little vegetable oil to the pan, then place one tortilla with the beef side down. Using a flat surface like the bottom of a saucepan, press down firmly to smash the beef thin. Cook for 1-2 minutes until edges crisp, then flip carefully.
  6. Add Cheese and Melt: Immediately place two slices of American cheese on top of the cooked beef, then cover with a lid for 30 seconds to melt the cheese perfectly.
  7. Keep Warm and Repeat: Remove the cooked taco from the pan. Repeat the cooking and cheese melting steps with the remaining tortillas and beef layers. To keep the completed tacos warm and prevent sogginess, place them on a cooling rack in an oven preheated to 120°C (240°F).
  8. Assemble and Serve: Serve the tacos topped with fresh lettuce, chopped pickles, and a generous drizzle of your homemade Big Mac sauce for the full flavor experience.

Notes

  • Make sure your skillet or griddle is very hot before smashing the beef to get a nice sear and crispy edges.
  • To avoid soggy tortillas, keep finished tacos on a cooling rack in a low oven instead of stacking or covering tightly.
  • You can substitute American cheese with cheddar or any melting cheese of your choice.
  • If you prefer spicier tacos, add more hot sauce to the Big Mac sauce or sprinkle some on the tacos before serving.
  • These tacos are best enjoyed immediately for optimal texture and temperature.
