A hearty and healthy cabbage soup made with fresh vegetables, herbs, and a light vegetable broth. This easy-to-make recipe is perfect for a comforting meal that's both flavorful and low in calories.

Ingredients

Vegetables and Herbs

  • 1 onion (diced)
  • 1 large carrot (diced)
  • 2 celery stalks (diced)
  • 2 garlic cloves (minced)
  • ½ cabbage (chopped)
  • ¼ cup roughly chopped fresh parsley

Spices and Seasonings

  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • Cracked black pepper (to taste)
  • 1 to 2 tablespoons lemon juice

Liquids

  • 2 tablespoons olive oil
  • 1 (14-ounce) can diced tomatoes
  • 4 to 6 cups vegetable broth (depending on desired thickness)

Instructions

  1. Cook the vegetables: Heat the olive oil in a large pot over medium-high heat. Add the diced onions, carrots, and celery, cooking them for 4 to 5 minutes until they start to soften.
  2. Add the aromatics: Stir in the minced garlic along with the dried oregano, dried basil, and salt. Cook for another minute to release their flavors.
  3. Add the cabbage: Incorporate the chopped cabbage into the pot and allow it to sweat for about 5 minutes, stirring frequently so it softens evenly.
  4. Simmer the soup: Pour in the vegetable broth and the can of diced tomatoes. Bring the mixture to a simmer and cook uncovered for 10 minutes, or until all vegetables are tender to your preference.
  5. Garnish and serve: Remove the pot from heat. Stir in the lemon juice, chopped parsley, and season with cracked black pepper to taste. Serve the soup hot for a nourishing meal.

Notes

  • You can adjust the thickness of the soup by adding more or less vegetable broth.
  • For a spicier kick, add crushed red pepper flakes when adding the spices.
  • This soup stores well and tastes even better the next day after flavors meld.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
