A flavorful Barbeque Chicken Pizza featuring a crispy pre-baked crust topped with tangy barbecue sauce, shredded rotisserie chicken, mozzarella cheese, thinly sliced red onions, and fresh cilantro. Baked to golden perfection, this pizza is ready in just 25 minutes and serves 4.

Ingredients

Pizza Base

  • Dough for one large pizza

Toppings

  • 1 1/2 cups cooked shredded chicken (rotisserie or about 2 chicken breasts)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup barbecue sauce
  • 1/4 large red onion, very thinly sliced
  • Fresh cilantro, to taste

Instructions

  1. Preheat and prebake the dough: Preheat your oven to 450 degrees Fahrenheit. Place your prepared pizza dough on a baking sheet or pizza stone and prebake it for 6 minutes. This helps to set the crust for toppings.
  2. Apply initial toppings: Spread a thin layer of barbecue sauce evenly over the prebaked pizza crust. Next, sprinkle a thin layer of shredded mozzarella cheese over the sauce, then add the thinly sliced red onions on top.
  3. Prepare the chicken topping: In a bowl, combine the shredded rotisserie chicken with a few tablespoons of barbecue sauce, tossing until the chicken is well coated. Spread the sauced chicken evenly over the pizza.
  4. Add final cheese and cilantro: Sprinkle another thin layer of mozzarella cheese over the chicken topping. Finish by adding chopped fresh cilantro according to your taste preference.
  5. Bake the pizza: Return the pizza to the oven and bake at 450 degrees Fahrenheit for 10 to 15 minutes, or until the crust turns golden brown and the cheese is bubbly and melted.

Notes

  • Prebaking the crust ensures a crisp base and prevents sogginess from the toppings.
  • Use rotisserie chicken for convenience; you can substitute with homemade cooked chicken if preferred.
  • Adjust the amount of barbecue sauce based on how saucy you like your pizza.
  • Thinly slicing the red onion prevents overpowering the other flavors.
  • Fresh cilantro adds a bright, herbal note but can be omitted if you dislike its flavor.
