These simple and wholesome Banana Oat Cookies are a healthy and delicious treat made with ripe bananas, rolled oats, honey, coconut oil, and chocolate chips. Perfectly chewy and naturally sweetened, they’re easy to make and ideal for a quick snack or breakfast on the go.

Ingredients

Main Ingredients

  • 1 medium sized ripe banana (peeled)
  • 100 g (1 cup) rolled oats (ensure gluten-free if needed)
  • 2 tbsp honey
  • 1 tbsp coconut oil (soft or melted)
  • 50 g (1/2 cup) chocolate chips (ensure gluten-free if needed)
  • Pinch of salt

Instructions

  1. Preheat Oven: Preheat your oven to 170°C (325°F) with a fan setting to ensure even baking throughout.
  2. Mash Banana and Mix: Place the peeled banana in a medium bowl and mash it thoroughly with a fork. Add rolled oats, honey, and coconut oil, then stir well to combine. Let the mixture rest on the countertop for 10 minutes so the oats absorb moisture.
  3. Add Chocolate Chips and Salt: After resting, fold in the chocolate chips, reserving a few for later, along with a pinch of salt. Stir until completely mixed.
  4. Shape Cookies: Scoop about a tablespoon of mixture and roll into a ball. Flatten into a disk about 1 cm thick and place on a baking tray. Repeat with remaining mixture.
  5. Bake Cookies: Bake the cookies in the preheated oven for 15 minutes until set.
  6. Finish and Cool: Remove from oven, sprinkle with reserved chocolate chips for an appealing look and extra chocolate bursts, then let the cookies cool completely on the tray.

Notes

  • Use gluten-free oats and chocolate chips if you require a gluten-free version.
  • For a vegan version, replace honey with maple syrup or agave nectar.
  • Do not overbake to keep cookies chewy and moist.
  • The resting time is essential for oats to soften and improve the cookie texture.
  • Store cooled cookies in an airtight container for up to 3 days.
