This delicious and creamy baked spinach dip combines tender spinach with a blend of cream cheese, sour cream, and flavorful cheeses, seasoned with onion and garlic powders, then baked to bubbly perfection. It's a perfect appetizer or snack to serve warm alongside chips, crackers, or fresh veggies.

Ingredients

Spinach

  • 10 ounces frozen spinach, defrosted

Dairy & Cheese

  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 ¼ cups mozzarella cheese, divided
  • ¾ cup parmesan cheese

Seasonings

  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Lightly spray an 8 x 8 inch baking pan with cooking spray to prevent sticking.
  2. Defrost spinach: Place the frozen spinach in a heatproof bowl and use the microwave’s defrost setting, checking every minute. Drain off any excess water carefully to avoid sogginess.
  3. Drain spinach: Wrap the spinach in a cheesecloth or thin kitchen towel and squeeze out as much moisture as possible. Then place it in a colander to let extra liquid drain for a few minutes. Note that spinach may stain your towel.
  4. Mix cream cheese and sour cream: In a large bowl, combine the softened cream cheese and sour cream until smooth. Use an electric mixer or mix thoroughly by hand.
  5. Add seasonings: Stir in onion powder, garlic powder, salt, and pepper until evenly distributed in the creamy mixture.
  6. Combine spinach and cheeses: Break up the drained spinach by hand or with a wooden spoon and add it to the cream cheese mixture. Mix in 1 cup of mozzarella cheese and all the parmesan cheese, stirring until the mixture is smooth and well combined.
  7. Bake the dip: Spread the spinach dip evenly into the prepared baking dish. Bake in the preheated oven for 20 minutes until heated through and slightly bubbling.
  8. Top and finish baking: Sprinkle the remaining ¼ cup mozzarella cheese on top and return the dip to the oven for another 3-5 minutes until the cheese is melted and lightly golden.
  9. Cool and serve: Let the dip cool for a few minutes before serving. Enjoy warm with your favorite chips, crackers, or fresh vegetables for dipping.

Notes

  • Make sure to squeeze out as much spinach moisture as possible to prevent a watery dip.
  • The spinach can stain kitchen towels, so use an older or darker-colored towel if available.
  • You can use fresh spinach if preferred; just sauté and drain thoroughly before using.
  • For a lower-fat version, substitute reduced-fat cream cheese and cheeses.
