Ingredients

Donut Batter

  • 2 and 1/2 Tablespoons (35g) unsalted butter (melted until browned)
  • 1 and 1/4 cups (150g) all-purpose flour
  • 1/2 teaspoon salt
  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (106g) light brown sugar (packed)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1/2 cup (113ml) milk (whole milk preferred)

Cinnamon Sugar Coating

  • 4 Tablespoons (57g) unsalted butter, melted
  • 1 cup (199g) granulated sugar
  • 1 and 1/2 teaspoons ground cinnamon

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Generously spray a 6-cavity donut pan with non-stick spray and set it aside.
  2. Brown the Butter: Place 2 and 1/2 tablespoons of butter in a small saucepan over medium heat. Stir frequently as it melts and watch for the butter to turn golden brown and emit a nutty aroma. Remove from heat and set aside to cool slightly.
  3. Mix Dry Ingredients: In a medium bowl, whisk together the flour, salt, baking powder, and ground nutmeg. Set this mixture aside.
  4. Combine Wet Ingredients: In a separate bowl, beat the browned butter together with the light brown sugar until well combined. Add the egg and vanilla extract, whisking to blend, then stir in the milk.
  5. Combine Mixtures: Gently fold the dry ingredients into the wet ingredients using a rubber spatula. Be careful not to overmix to keep the batter light and fluffy.
  6. Fill and Bake: Spoon or pipe the batter evenly into the prepared donut pan. Bake in the preheated oven for 10 to 11 minutes, or until the donuts bounce back when lightly pressed.
  7. Cool Donuts: Allow the donuts to cool in the pan for 5 minutes before carefully unmolding them and transferring to a wire rack to cool further.
  8. Prepare Cinnamon Sugar Coating: Melt the remaining 4 tablespoons of butter in a small pan over medium heat or in the microwave. Pour the melted butter into a wide, shallow bowl. In another bowl, mix together the granulated sugar and ground cinnamon.
  9. Coat Donuts: Once the donuts have cooled enough to handle, dip each donut into the melted butter, coating both sides and the edges thoroughly. Then roll the donut in the cinnamon sugar mixture, ensuring an even coating.

Notes

  • Using browned butter adds a deeper, nutty flavor to the donuts that enhances their richness.
  • Room temperature egg helps the batter mix more evenly and contributes to a tender texture.
  • Whole milk gives the best flavor and texture, but you can substitute with other milk types if needed.
  • Do not overmix the batter to avoid tough donuts.
  • Allow donuts to cool slightly before coating to prevent the cinnamon sugar from melting off.
  • Donuts are best enjoyed fresh but can be stored in an airtight container for one day.
