This Apple Cilantro Lime Coleslaw is a refreshing and flavorful twist on traditional coleslaw, combining crisp cabbage and carrots with sweet apple, fresh cilantro, and a zesty lime-infused dressing. Perfect as a light side dish or a vibrant addition to summer meals.

Ingredients

Coleslaw Base

  • 16 ounce bag coleslaw mix (or 9 cups shredded cabbage and 1 cup matchstick carrots)
  • 1 cup cilantro, finely chopped
  • 1 medium apple (Fuji or Gala), diced
  • ½ cup sliced almonds

Dressing

  • ¼ cup light mayonnaise
  • ¼ cup non-fat Greek yogurt
  • 2 tablespoons honey
  • Juice from ½ of a lime
  • 1 teaspoon yellow mustard
  • Salt and Pepper to taste (about 1/8 to 1/4 teaspoon each)

Instructions

  1. Make the Dressing: Whisk together the light mayonnaise, non-fat Greek yogurt, honey, lime juice, yellow mustard, salt, and pepper in a bowl until the mixture is smooth and well combined. Set the dressing aside.
  2. Prepare the Coleslaw Mix: In a large mixing bowl, combine the coleslaw mix (or shredded cabbage and matchstick carrots), diced apple, finely chopped cilantro, and sliced almonds. Toss them gently to mix all the ingredients evenly.
  3. Toss with Dressing: Pour the prepared dressing over the coleslaw mixture. Toss thoroughly until all the ingredients are evenly coated with the dressing. You can serve the coleslaw immediately, but for best flavor, cover it with plastic wrap and refrigerate for a couple of hours to allow the flavors to meld.

Notes

  • For a crunchier texture, add the sliced almonds just before serving.
  • You can substitute the light mayonnaise with full-fat for a richer taste, adjusting other fats accordingly.
  • Use tart green apples instead of sweet types for a tangier flavor.
  • This coleslaw pairs well with grilled meats and seafood for summer meals.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
