Ingredients

Dry Ingredients

  • 4 cups salted mini pretzels
  • 1 1/2 cups old fashioned oats
  • 1/2 cup all-purpose or whole wheat flour
  • 1/4 - 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 2 sticks salted butter, at room temperature
  • 2 teaspoons vanilla extract

Filling

  • 10-12 ounces jam (strawberry, blackberry, or blueberry)
  • 1/2 cup fresh berries (chopped strawberries, raspberries, etc.)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9x13 inch baking dish with parchment paper to ensure easy removal of the bars later.
  2. Make Pretzel Flour and Mix Dough: Using a food processor or blender, grind the salted mini pretzels until they form a fine powder resembling flour. Measure out 1 cup of this pretzel flour and transfer it to a large mixing bowl. Add the old fashioned oats, all-purpose or whole wheat flour, brown sugar, baking powder, and salt. Add the softened butter and vanilla extract, then beat the mixture until the butter is fully incorporated and a crumbly dough forms.
  3. Assemble the Bars: Press about one-third of the dough evenly into the bottom of the prepared baking dish to form a crust. Spread the jam evenly over this layer, then scatter the fresh chopped berries on top. Crumble the remaining dough over the fruit layer as the topping.
  4. Bake to Perfection: Place the baking dish in the preheated oven and bake for 30 to 40 minutes or until the crumble topping turns golden brown and the filling is bubbling slightly.
  5. Cool and Serve: Remove the bars from the oven and allow them to cool completely in the pan before slicing into 24 servings. Store any leftovers in a sealed container at room temperature for up to one week.

Notes

  • Select your jam based on your preference or seasonal fruits; strawberry, blackberry, or blueberry work best.
  • For a healthier option, consider using whole wheat flour instead of all-purpose flour.
  • Make sure the butter is at room temperature to achieve the best dough consistency.
  • Press the bottom crust firmly into the pan to prevent the filling from seeping through during baking.
  • This recipe is perfect for meal prep or as a grab-and-go snack, storing well for up to one week.
