These 5-Ingredient Strawberry Breakfast Pastries are quick and easy to make, featuring flaky puff pastry filled with a creamy strawberry and cream cheese mixture and topped with fresh strawberries. Perfectly golden and puffed, they make a delightful breakfast or snack option.

Ingredients

Pastry

  • 1 sheet puff pastry (half of a 17.3-ounce package), thawed

Filling

  • 1/4 cup cream cheese, at room temperature
  • 1 tablespoon strawberry jam
  • 1 1/2 cups sliced strawberries

Egg Wash & Topping

  • 1 large egg
  • Sanding sugar, for topping (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400ºF (204ºC). Line a baking sheet with parchment paper or a Silpat to prevent sticking and ensure even baking.
  2. Cut Puff Pastry: Cut the thawed puff pastry sheet into six rectangles by following the perforations. First, cut into three long rectangles, then cut each into two smaller rectangles. Place the pastries on the prepared baking sheet, leaving at least 1 inch between them.
  3. Score and Prick Dough: Lightly score a 1/2-inch border around the edges of each pastry without cutting through. Prick the center area with a fork several times to prevent excessive puffing in the middle.
  4. Prepare Filling: In a small bowl, combine the cream cheese and strawberry jam until smooth. Spoon a dollop of this mixture in the center of each pastry within the scored border, spreading it evenly. Top with sliced strawberries.
  5. Apply Egg Wash and Sugar: Whisk the egg with 1 tablespoon of water to make an egg wash. Brush the edges of each pastry with the egg wash and sprinkle with sanding sugar if desired for extra sweetness and crunch.
  6. Bake: Bake the pastries in the preheated oven for 15 to 17 minutes or until they are golden brown and puffed up.
  7. Serve: Remove from oven and let cool slightly before serving. Enjoy your freshly baked strawberry breakfast pastries warm.

Notes

  • Make sure the puff pastry is properly thawed to avoid cracking or tearing when cutting and handling.
  • Use fresh strawberries for best flavor and texture; if strawberries are not in season, consider using frozen sliced strawberries that are thawed and drained.
  • You can substitute raspberry jam or any other complementary fruit jam if desired.
  • Sanding sugar is optional but adds a nice sparkle and slight crunch to the pastry edges.
  • These pastries are best eaten the same day for optimal flakiness and freshness.
