Ingredients
Bananas
2 bananas (cut in half and sliced lengthwise)
For Caramelization
2 tbsp coconut oil
1 tbsp coconut sugar (or brown sugar)
Pinch of cinnamon
Instructions
Prepare the caramel base: In a small saucepan over medium heat, melt coconut oil. Sprinkle in coconut sugar and a pinch of cinnamon, then stir to combine the ingredients evenly.
Add the bananas: Place the sliced bananas with the flat side down clustered inside the saucepan, making sure they form a neat layer to maximize caramelization.
Caramelize the bananas: Cook the bananas for about 3 minutes until the bottom side is browned, soft, and caramelized, then flip carefully to cook the other side for another 3 minutes until equally browned and sticky.
Serve: Remove the caramelized bananas from heat and serve them warm as a topping for oatmeal, porridge, pancakes, waffles, crepes, ice cream, or yogurt for a delicious sweet treat.
Notes
Use ripe but firm bananas for best caramelization without mushiness.
Substitute brown sugar for coconut sugar if unavailable.
Serve immediately for the best texture and flavor.
Adjust sweetness by varying the sugar quantity to taste.
Can be stored in an airtight container in the refrigerator for up to 2 days and gently reheated before serving.
